Easy Creamy Mushroom and Wild Rice Soup Recipe

 Some of the best recipes are born out of just throwing some things together from your fridge and pantry.  Point in case this Easy Creamy Mushroom Soup Recipe.  I had some mushrooms in my fridge that NEEDED to be used up and it was super cold out, so soup it was!  



Easy Creamy Mushroom and Wild Rice Soup turned out to be one of, if not THE BEST soup I have ever made.  Rich, creamy, flavorful, this soup hit all the right notes on my palate and I can't wait to share it with you!  








TIPS FOR THIS RECIPE:

Q:  Can this be made vegan Vegetarian?

A:  Yes.  Just use vegetable broth and substitute the heavy cream for cashew cream of a vegan version.  Then add your favorite vegan Swiss. 

TIP:  I use Rice a Roni Long Grain wild rice for this.  It makes it so much easier and adds a lot of flavor. 

         I also like to use KNORR chicken broth bullion.  It also adds A LOT of flavor to this dish. 

Q:  Do I have to use heavy cream?

A:  No.  You can use half and half or even milk.  It will affect the texture though.

  2. I made this soup today. I only had o make a small substitution, milk for the cream. I also added a can of cooked collard greens for a little extra veggie power. I love it, and better yet so did my husband. This one is a true "keeper"
