How to Make Easy Homemade Gingerbread Cookies

Today is December 1st, and that means that Christmas season has officially begun!  But who are we kidding?  We have been in full on Christmas prep mode since about the second week of November!  LOL  Christmas has always been my favorite time of year.  As a child my mom always made this season magical. Now that I am a mom it is my hope that I can share that same kind of magic with my son.  One of the traditions I always looked forward to was cooking baking.  Growing up we always made the usuals, but this I got to shake things up a bit.  Part of our homeschool curriculum required us to baked homemade gingerbread cookies.  I was equally scared and excited.  I am not a great baker, so you can imagine my concerns.  Well, this recipe was SO EASY and I only had to pick up one ingredients  from the store.  Camden (my son) was even able to do most of the work!

NOTES FOR THIS RECIPE:

1: This recipe makes a cookie that is crispy around the edges, but chewy in the center.  

2: Be sure to allow time to chill the dough.  I almost made that fatal mistake.  READ THE RECIPE! 

3: You can freeze this dough as well if you don't want to use it right away.  Just thaw before rolling out.

4: You don't have to make the homemade icing.  In fact, I cheated and bought one from Walmart (see            pictures) and it worked great!  

5: Remember, cookie making around the holidays should be fun.  Don't sweat the small stuff.
