Q: Can this recipe be made vegan/vegetarian?
A: Yes. This recipe can easily be transitioned to plant based. For vegan, you will need to swap the regular ingredients with vegan tortellini, sausage, coconut cream, and parmesan cheese. If you can't find vegan tortellini you can swap for ravioli. For vegetarian you will simply need to swap the broth for vegetable broth and plant based sausage.
Q: I can't find the apple sausage. Can I use regular smoked sausage.
A: Absolutely. You can use any sort of protein really, but things like chicken and beef will change the cooking time.
Q: I'm not a fan of kale. Can I use spinach?
A: Yes! You can even omit it all together if you want.
Q: Can I use fresh butternut Squash and Kale?
A: Yes, but that will affect the 30 minute cooking time.
