All About Me

Hey y’all, I’m Mandee — the voice, the cook, the chaos coordinator behind The Kitchen Wife.

I live in a West Virginia kitchen where dinner gets made whether I feel like it or not… and most days, I don’t. But here’s the thing — my family still expects to eat, my budget still has limits, and somehow we still want food that actually tastes good.

So I figured out how to make that happen.

Not perfectly. Not Pinterest-pretty. But real-life doable.

I’m a homeschool mom, which means I’m juggling lessons, life, and “what’s for dinner” all at the same time — usually while reheating my coffee for the third time. My kitchen isn’t aesthetic. It’s efficient. It’s lived-in. And sometimes it looks like a crime scene right before dinner hits the table.

Around here, we cook food that:

  • feeds a real family

  • works on a real budget

  • and doesn’t require 47 ingredients or three separate pans (absolutely not)

You’ll see a lot of plant-forward meals, budget-friendly swaps, and “use what you have” kind of cooking. Because I’m not about to make a separate meal for everyone in my house — we’re all eating the same thing, and it’s going to be good.

I believe:

  • beans can fix more meals than people realize

  • one-pot dinners are a personality trait

  • and coffee doesn’t count (don’t argue with me on this)

My husband? Meat and potatoes guy.
My kid? Keeping me humble daily.
Me? Out here trying to hit protein goals, stretch a grocery budget, and not lose my mind by Thursday.

This blog exists because I got tired of:

  • overcomplicated recipes

  • expensive ingredients

  • and food that looks pretty but doesn’t actually work in real life

So everything you see here is tested in a real kitchen, on real people, with real constraints.

If it’s not worth making again? I won’t pretend it is.

If it slaps? Oh, we’re putting it on repeat.

Around here, we keep it simple, flexible, and just a little bit scrappy — because that’s how real life works.

Welcome to my kitchen.

Let’s make something that actually works.

Happy Eatin' Y'all
