Crockpot Italian Chicken and Rice Recipe

I don't know about you, but this time of year has me craving all the comfort foods, and it doesn't get much more comforting that this Crockpot Italian Chicken with Rice Recipe.

This dump and go recipe is an easy dinner that comes together in no time and is entirely made in your slow cooker!  I know you're gonna love it so...

Let's get started!

For this Crockpot Italian Chicken with Rice Recipe you are going to need a few simple ingredients:

The ingredients needed to make the crockpot Italian chicken and rice.

  • 2 Boneless Skinless Chicken Breast
  • 2 cups INSTANT Rice
  • 2 cups Chicken Broth
  • 2 cups Heavy Cream
  • 1/4 cup Sun-Dried Tomatoes, finely chopped
  • 1 10.5 oz can Cream of Chicken Soup
  • 1 packet of Italian Salad Dressing & Seasoning Mix
  • 1 bag of Fresh Baby Spinach
  • 5 oz. Shredded Parmesan Cheese

A can of cooking spray used to spray the slow cooker insert to keep the rice from sticking.

To being you will need to either line your slow cooker with a liner or spray it with cooking spray.

Two frozen chicken breasts placed in the bottom of the crockpot.

Next, place the chicken breasts in the bottom of the crockpot insert.

2 cups of instant rice poured into the crockpot over the chicken.

After that, pour the INSTANT RICE over the chicken.

I chose to use instant rice here because after doing extensive research on how to cook rice in the slow cooker I saw comment after comment that the rice was not fully cooked, and still crunchy.  By using the instant rice you are guaranteed that it will be perfectly cooked.  So before you ask, YES!  Yes, you MUST use instant rice.

A can of cream of chicken soup.

Now in a mixing bowl combine the cream of chicken soup,

A pint of heavy cream.

A packet of Italian salad dressing and seasoning mix.

The cream of chicken, heavy cream, and italian seasoning packet all whisked together in a mixing bowl.

and chicken broth.  

Whisk together and pour into the crockpot. 

A 1/4 cup of sun dried tomatoes in oil chopped finely.

Finely chop your sun-dried tomatoes.

Add those to the slow cooker as well.

The slow cooker with the lid on, and set to LOW for 6 hours.

Place the lid on the crockpot and set it to LOW for 6 hours.

The fully cooked chicken and rice in the crockpot.

After 6 hours your rice will be perfectly cooked along with your chicken.

Remove the chicken from the slow cooker and shred.

Return the shredded chicken to the crockpot.

How to cook Crockpot Italian Chicken with Rice Recipe

  1. Line your crockpot or spray cooking spray over the insert.
  2. Place the chicken in the bottom of the slow cooker. 
  3. Pour instant rice over the chicken. 
  4. In a mixing bowl combine the cream of chicken soup, cream, and chicken broth.  Whisk until smooth. 
  5. Pour the milk mixture over the chicken and rice in the crock pot. 
  6. Add the sun dried tomatoes to the slow cooker. 
  7. Place the lid on the crockpot and set to LOW for 6 hours. 
  8. After 6 hours remove the chicken from the crockpot and shred. 
  9. Return the shredded chicken to the slow cooker.
  10. Add the spinach and parmesan cheese to the crock pot. 
  11. Stir everything together until the spinach wilts.  
  12. Serve and Enjoy!
