I don't know about you, but this time of year has me craving all the comfort foods, and it doesn't get much more comforting that this Crockpot Italian Chicken with Rice Recipe.
This dump and go recipe is an easy dinner that comes together in no time and is entirely made in your slow cooker! I know you're gonna love it so...
Let's get started!
For this Crockpot Italian Chicken with Rice Recipe you are going to need a few simple ingredients:
- 2 Boneless Skinless Chicken Breast
- 2 cups INSTANT Rice
- 2 cups Chicken Broth
- 2 cups Heavy Cream
- 1/4 cup Sun-Dried Tomatoes, finely chopped
- 1 10.5 oz can Cream of Chicken Soup
- 1 packet of Italian Salad Dressing & Seasoning Mix
- 1 bag of Fresh Baby Spinach
- 5 oz. Shredded Parmesan Cheese
To being you will need to either line your slow cooker with a liner or spray it with cooking spray.
Next, place the chicken breasts in the bottom of the crockpot insert.
After that, pour the INSTANT RICE over the chicken.
I chose to use instant rice here because after doing extensive research on how to cook rice in the slow cooker I saw comment after comment that the rice was not fully cooked, and still crunchy. By using the instant rice you are guaranteed that it will be perfectly cooked. So before you ask, YES! Yes, you MUST use instant rice.
Now in a mixing bowl combine the cream of chicken soup,
heavy cream,
Italian seasoning mix,
and chicken broth.
Whisk together and pour into the crockpot.
Finely chop your sun-dried tomatoes.
Add those to the slow cooker as well.
Place the lid on the crockpot and set it to LOW for 6 hours.
After 6 hours your rice will be perfectly cooked along with your chicken.
Remove the chicken from the slow cooker and shred.
Return the shredded chicken to the crockpot.
Add the shredded parmesan cheese and...
the ENTIRE bag of spinach.
YES, the WHOLE bag!
Mix everything together until the spinach wilts and you are ready to eat!

How to cook Crockpot Italian Chicken with Rice Recipe
- Line your crockpot or spray cooking spray over the insert.
- Place the chicken in the bottom of the slow cooker.
- Pour instant rice over the chicken.
- In a mixing bowl combine the cream of chicken soup, cream, and chicken broth. Whisk until smooth.
- Pour the milk mixture over the chicken and rice in the crock pot.
- Add the sun dried tomatoes to the slow cooker.
- Place the lid on the crockpot and set to LOW for 6 hours.
- After 6 hours remove the chicken from the crockpot and shred.
- Return the shredded chicken to the slow cooker.
- Add the spinach and parmesan cheese to the crock pot.
- Stir everything together until the spinach wilts.
- Serve and Enjoy!
