It's hard to believe that summer is coming to a close and school is starting. In fact, school started TODAY in my hometown! With school back in session I know that many parents struggle with creating lunches that are both fun and healthy! So I thought I would try and help you out with my Peanut Butter and Jelly Sushi Back to School Bento Box.
The best part about this Peanut Butter and Jelly Sushi Back to School Bento Box is that it can be made the night before, and it is so simple your little ones can even get involved in the making process. I can't wait to share it with you so let's get started!
The first thing I did was head to my local Giant Eagle for all my supplies. I love Giant Eagle because it's convenient, and they have a huge variety of items to choose from. You can find great options for everything from breakfast, to lunch, to after school snacks and all at great prices. Once I purchased what I needed, I headed home to get cooking!
Peanut Butter and Jelly Sushi Bento Box:
*Prep Time: 3 min *Cook Time: -- *Difficulty: Easy *Servings: 1 Box
Ingredients:
- 1 slice of Schwebel's 100% Whole Wheat Bread
- 1 Tbsp of Jif Peanut Butter
- 1 Tbsp of Smucker's Concord Grape Jam
- 1 Capri Sun
- 1/4 c. Steamed Edamame
- 1 Giant Eagle Mozzarella Stick
- 1 Strawberry Sliced
As with any proper peanut butter and jelly sandwich you will need to cut off the crust. Because let's be real, who wants crust on their sushi?
Next, to make the bread a little more pliable you will want to roll it out flat with a rolling pin.
Now spread the peanut butter out all over the slice of bread.
I know as parents we are always trying to help our kids make better choices, and I love that Jif has this new "Simply Jif" line that has less sodium and sugar.
After that, you will spread the grape jam over the peanut butter.
Again I opted for the sugar free option provided by Smucker's.
Hey, every little but helps, right!
To add a little bit of a fresh element to my "sushi", I sliced a strawberry and placed over half of the slice of bread.
Now simple roll up your peanut butter and jelly sushi roll!
Once it is rolled up I used a serrated knife to cut it into 4 equal pieces.
For the bento box I found this great slotted lunch box. It's reusable, dishwasher safe, and it has these cute utensils on the top!
Then I placed everything in it just like this.
I added some steamed edamame for a great source of protein as well as some berries and string cheese. For the drink, I added the organic Capri Sun and some chop sticks for fun and good measure. Oh, and to make clean-up a breeze I added a couple Giant Eagle baby wipes in a resealable bag.
