Are you looking for a hearty and delicious breakfast that can be made in a variety of ways? Look no further! My Sausage Egg and Cheese Breakfast Taquitos are just the ticket!
Let's Get Started!
INGREDEITNS:
- 4 Large Eggs
- Salt and Pepper
- 1 (10 count) package of Brown and Serve Sausage Links
- 1 cup Cheddar Cheese, Shredded
- 5 Flour Tortillas
- Oil
STOVETOP METHOD:
- Cook the Sausage: In a large skillet cook the brown and serve sausage according to the package instructions. Remove from pan and set aside.
- Prepare the Eggs: In a bowl whisk together the eggs. Pour the beaten eggs into the same skillet and scramble until fully cooked. Remove from pan and set aside.
- Assemble the Taquitos: Place a couple spoonfuls of eggs in the center of the flour tortilla. Add a little shredded cheese over the scrambled eggs. Place 2 links of the sausage end-to-end on top the the cheese and eggs. Roll them up tightly.
- Cook the Taquitos: In the same skillet, add a little oil and all it to get hot. Place the breakfast taquitos seam-side-down and cook until golden brown, turning occasionally to ensure even cooking.
- Serve: Enjoy your taquitos hot with salsa, sour cream, or guacamole.
OVEN METHOD:
- Preheat the Oven: Preheat your oven to 400°F/200°C.
- Cook the Sausage: In a large skillet cook the brown and serve sausage according to the package instructions. Remove from pan and set aside.
- Prepare the Eggs: In a bowl whisk together the eggs. Pour the beaten eggs into the same skillet and scramble until fully cooked. Remove from pan and set aside.
- Assemble the Taquitos: Place a couple spoonfuls of eggs in the center of the flour tortilla. Add a little shredded cheese over the scrambled eggs. Place 2 links of the sausage end-to-end on top the the cheese and eggs. Roll them up tightly.
- Bake the Taquitos: Place the taquitos seam-side-down on a lined baking sheet. Lightly pray them with cooking spray or brush with melted butter. Bake for 15-20 minutes or until golden brown crispy.
- Serve: Enjoy your taquitos hot with salsa, sour cream, or guacamole.
AIR FRYER METHOD:
- Cook the Sausage: In a large skillet cook the brown and serve sausage according to the package instructions. Remove from pan and set aside.
- Prepare the Eggs: In a bowl whisk together the eggs. Pour the beaten eggs into the same skillet and scramble until fully cooked. Remove from pan and set aside.
- Assemble the Taquitos: Place a couple spoonfuls of eggs in the center of the flour tortilla. Add a little shredded cheese over the scrambled eggs. Place 2 links of the sausage end-to-end on top the the cheese and eggs. Roll them up tightly.
- Air Fry the Taquitos: Preheat the air fryer to 375°F/190°C. Place the taquitos seam-side-down in the air fryer basket in a single layer. Lightly spray them with cooking spray or brush with melted butter. Air fry for 8-10 minutes or until golden brown and crispy, turning half way through.
- Serve: Enjoy your taquitos hot with salsa, sour cream, or guacamole.
- Prevent Overfilling: To avoid taquitos from breaking, don't overfill them with the sausage, egg, and cheese.
- Seal the Edges: Make sure to roll the taquitos tightly and place them seam-side-down to keep them from unrolling during cooking.
