TIPS FOR THE PERFECT TAQUITOS:
  • Prevent Overfilling:  To avoid taquitos from breaking, don't overfill them with the sausage, egg, and cheese.
  • Seal the Edges:  Make sure to roll the taquitos tightly and place them seam-side-down to keep them from unrolling during cooking.
  • Crispier Taquitos:  For extra crispy taquitos, lightly spray or brush them with oil before cooking.

VARIATIONS:
  • Vegetarian Option:  Substitute the sausage with sautéed veggies like bell peppers, onions, and mushrooms.
  • Spicy Twist:  Add chopped jalapeños or a sprinkle of chili powder to the egg mixture to a spicy kick.
  • Different Cheeses:  Experiment with different cheeses such as pepper jack, mozzarella, feta, or more unique flavors.
