Irresistible No Bake Peanut Butter Pie Recipe

Hey Y'all!  Welcome to my West Virginia Kitchen!  I am NOT a baker, so I am always looking for easy-to-make desserts.  If that's you then I have the perfect solution, my Irresistible No Bake Peanut Butter Pie.

INGREDIENTS:


For the Crust:
  • 1 1/2 cups Graham Cracker Crumbs
  • 1/3 cup Sugar
  • 1/2 cup Melted Butter
For the Filling:
  • 1 cup Creamy Peanut Butter
  • 8 oz Cream Cheese, softened
  • 1 cup Powdered Sugar
  • 1 tsp Vanilla Extract
  • 1 (8 oz) tub of Cool Whip
For Topping: 
  • 1/2 cup Semi-Sweet Chocolate Chips
  • 1/2 cup Milk
  • 1/4 Chopped Peanuts







INSTRUCTIONS:
  1. Prepare the Ganache:  Pour the milk into a sauce pan over medium-heat.  Bring to a slight boil around the edges of the pan.  Remove from heat and add the chocolate chips, stirring until the chocolate has melted and the ganache appears smooth and glossy.  Let cool. 
  2. Prepare the Crust:  In a medium bowl, combine graham cracker crumbs, sugar, and melted butter.  Press the mixture into the bottom and up the sides of a 9-inch pie dish. Place in the refrigerator to set while you prepare the filling. 
  3. Make the Filling:  In a large mixing bowl, beat together the peanut butter and cream cheese until smooth.  Add the powdered sugar and vanilla extract, and mix until well combined.  Add the cool whip and beat until smooth and well incorporated.  
  4. Assemble the Pie:  Pour the peanut butter filing into the prepared pie crust, spreading evenly.  Pour the cooled ganache over the top of the pie and add chopped peanuts if you desire.  Refrigerate for at least 4 hours, or until firm. 
  5. Serve and Enjoy:  Before serving, add a dollop of whip cream for garnish if you like.  Slice and enjoy your creamy, dreamy, No Bake Peanut Butter Pie.

TIPS FOR SUCCESS:

  • Chill the Crust:  Ensure your crust is well chilled to provide a sturdy base for the filling.  
  • Room Temperature Ingredients:  Allow your cream cheese to soften at room temperature for easier mixing.

VARIATIONS:
  • Chocolate Drizzle:  If a full ganache topping is not your thing feel free to do a ganache drizzle for a little extra something. 
  • Oreo Crust:  Substitute the graham cracker crust with an Oreo crust for a chocolaty twist.
  • Nut-Free:  Use sunflower seed butter instead of peanut butter for a nut-free version.
