INGREDEINTS:
  • 1 lb Italian Sausage (sweet or spicy, depending on your preference)
  • 1 can (14 oz) Quartered Artichoke Hearts, drained 
  • 1 can (15 oz) White Beans (cannellini or Great Northern), drained and rinsed
  • 2 cups Curly Kale, stemmed and chopped
  • 1 Onion, diced
  • 1 Tbsp Garlic, minced
  • 1 can(14.5 oz) Petite Diced Tomatoes
  • 1/2 cup Chicken Broth
  • 1/4 cup Parmesan Cheese
  • 1 Tbsp Olive Oil
  • 1 tsp Dried Oregano 
  • 1/2 tsp Red Pepper Flakes (optional)
  • 2 Tbsp Sugar or Maple Syrup
  • Salt and Pepper to taste
  • Fresh parsley, chopped for garnish 





INSTRUCTIONS:
  1. Cook the Sausage:  Heat the olive oil in a large skillet over medium heat.  Add the Italian Sausage and cook until browned, breaking it up into smaller pieces with a spatula, about 5-7 minutes. 
  2. Sauté the Vegetables:  Add the chopped onion to the skillet and sauté until translucent, about 3-4 minutes.  Stir in the minced garlic and cook for additional 1-2 minutes until fragrant.  
  3. Add Artichokes, Tomatoes, and Kale:  Add the drained artichoke hearts canned tomatoes to the skillet.  Simmer, stirring occasionally, for about 5 minutes.
  4. Incorporate the White Beans and Seasonings:  Stir in the white beans, chicken broth, dried oregano, red pepper flakes (if using), salt, and pepper.  Add the sugar to cut the acid if desired. Bring the mixture to a simmer and let it cook for about 5 minutes to allow the flavors to meld together. 
  5. Finish and Serve:  Sprinkle the grated Parmesan cheese over the top of the skillet.  Remove from the heat and garnish with fresh parsley.  Serve hot and enjoy!
