Breakfast Fried Rice Recipe with a Fried Egg on Top

INGREDIENTS
  • 2 cups cooked rice (preferably day-old)
  • 2 Tbsp vegetable oil
  • 1 small onion, finely chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 8 slices of bacon
  • 1 Tbsp minced garlic
  • 3 Tbsp low sodium soy sauce
  • 1 Tbsp oyster sauce (optional)
  • 2 eggs
  • 2 green onions
  • salt and pepper to taste




INSTRUCTIONS

Step 1:  Prepare the Ingredients
  1. Cook the Rice:  If you don't have leftover rice, cook fresh rice and let it cool.  Day0old rice works best for fried rice.
  2. Chop the Vegetables:  Finely chop the onion, bell peppers, and mince the garlic.
Step 2:  Cook the Bacon
  1. In a large skillet, cook the bacon until crispy.  Remove and place on a paper towel to remove excess grease.  Once cooled crumble into bite-sized pieces.
Step 3:  Cook the Vegetables
  1. Heat the Oil:  In a large skillet or wok, heat the vegetable oil over medium-high heat.  
  2. Sauté the Onion and Garlic:  Add the chopped onion and minced garlic to the skillet.  Sauté for 2-3 minutes until fragrant and translucent.
  3. Add the Bell Peppers:  Stir in the diced bell peppers.  Cook another 3-4 minutes until they are tender.
Step 4:  Fry the Rice
  1. Add the Rice:  Add the cooked rice to the skillet.  Break up any clumps and stir well to combine with the vegetables.
  2. Season the Rice:  Pour the soy sauce and oyster sauce (if using).  Stir continuously to ensure the rice is evenly coated and heated through.  Cook for 5-6 minutes, allowing the rice to get slightly crispy.
Step 5:  Fry the Egg
  1. Heat a Small Pan:  In a separate small frying pan, heat a bit of oil over medium heat.  
  2. Fry the Eggs:  Crack the eggs into the pan and fry until the whites are set, but the yolks are still runny, about 3-4 minutes.  Season with a pinch of salt and pepper. 
Step 6:  Serve
  1. Assemble the Dish:  Divide the fried rice into bowls or plates.  Top each serving with a fried egg.
  2. Garnish:  Sprinkle chopped green onions over the top for added flavor and color.
