Ingredients

  • 14 fajita sized flour tortillas, cut in half
  • 1 pound of ground beef or any ground meat you like.
  • 1 packet of taco seasoning
  • 4 Tbsp butter
  • 2 cups heavy cream
  • 4 cups Mexican blend cheese
  • 1 16oz jar of salsa
  • 1 bunch of fresh cilantro
  • 2 cups shredded mozzarella
  • 1 bunch of green onions, sliced

Instructions

  1. Preheat the oven to 400 degrees.
  2. In a skillet, cook the ground beef until brown and fully cooked. Add taco seasoning and cook according to the directions on the packet. Remove from pan when finished.
  3. In the same skillet you cooked your taco meat in, add the butter. Let melt, then add the heavy cream and 3 cups of shredded Mexican blend cheese. Stir until the sauce thickens and the cheese is fully melted into the sauce.
  4. In a greased 9x13 baking dish you are going to line the bottom of the pan with a layer of the halved flour tortillas. Line the perimeter of the pan with the flat side of the cut tortilla. Then fill the middle section with a tortilla half.
  5. Add a layer of the taco meat. Next add a layer of the cheese sauce. After that you will drizzle a little salsa over the cheese sauce. Sprinkle a layer of the mozzarella cheese, then a layer of the sliced green onion. Finally sprinkle a little fresh cilantro. Repeat this step for 2 more layers.
  6. Cover the entire top with the rest of the Mexican blend cheese and place in the 400 degree oven for 20-30 minutes. until the top is brown and bubbly.
  7. Remove from the oven and let sit for at least 10 minutes, but 30 would be best.
  8. Top with some more fresh cilantro and green onion and ENJOY!

TIPS FOR THIS RECIPE:

Q: Can this recipe be made vegan/vegetarian?

A:  Yes! As for Vegan you use vegan meat crumbles or black beans for the meat.  For the Sauce you can use a cashew cream to melt your vegan cheese into.  Then obviously use vegan cheese for the layers and top.  For Vegetarian, simply replace the meat for the "vegan" substitutes.

Q:  Can I use Corn tortillas?

A:  Yes.  Corn tortillas work great, as well as gluten-free and carb counter ones.

Q:  Can I use ground turkey, chicken, or sausage for this recipe?

A:  Of course!  You can use any ground meat you like.

Q:  So I have to use heavy cream?

A:  Yes.  It is too runny with milk and half and half.

Q:  Can I use dried cilantro?

A:  You can, but I HIGHLY recommend using fresh.  It makes a difference.

Q:  Do I have to use this much cheese?

A: Are you even kidding me with this question?

Q:  Can this be made healthier?

A:  If health is your concern maybe this is not the recipe for you.
