Copycat KFC Mashed Potato Bowl Recipe: A Comfort Food Classic You Can Make at Home

INGREDIENTS:

To recreate these Copycat KFC Mashed Potato Bowls at home, you will need to gather a few simple ingredients.  But don't worry, I will give you some shortcut cheats at the bottom of this post too.  ;) 


For the Mashed Potatoes:

  • 4 large russet potatoes, peeled and chopped
  • 1/2 cup milk
  • 1/4 cup butter
  • salt and pepper to taste

For the Chicken:
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup buttermilk
  • oil for frying

For the Gravy:
  • 2 cups beef broth
  • 2 Tbsp Cornstarch
  • 1/4 cup water
  • salt and pepper to taste

For the Toppings: 
  • 1 cup frozen corn
  • 1 cup shredded cheddar cheese





INSTRUCTIONS:


1.  Prepare the Mashed Potatoes:  
  • Boil the chopped potatoes in a large pot of salted water until tender, about 15-20 minutes. 
  • Drain the potatoes and return them to the pot. 
  • Add the milk, butter, salt and pepper. 
  • Mash the potatoes until smooth and creamy.  Adjust the seasoning to taste.
2.  Cook the Chicken:
  • In a bowl, combine the flour, salt, pepper, paprika, garlic powder, and onion powder.
  • Dip the chicken pieces into the buttermilk, then dredge them in the flour mixture, ensuring they are well coated. 
  • Heat the oil in a large skillet over medium-high heat. 
  • Fry the chicken pieces until golden brown and crispy, about 5-7 minutes per side.  
  • Remove the chicken and drain on paper towels.

3.  Make the Gravy:
  • In a sauce pot, bring the beef broth to a boil.
  • Whisk together the cornstarch and water to make a slurry.  
  • Pour the slurry into the beef broth, whisking continually whisking.
  • Simmer until gravy thickens. 
  • Season with salt and pepper to taste.

4.  Assemble the Bowls:
  • Divide the mashed potatoes among four bowls.
  • Top each with portion of crispy chicken pieces.
  • Add a scoop of corn to each bowl.
  • Drizzle the gravy generously over the top. 
  • Sprinkle with shredded cheddar cheese. 

5.  Serve and Enjoy:
  • Serve the bowls hot, and enjoy the comforting flavors of this homemade classic.









TIPS FOR THE PERFECT COPYCAT KFC MASHED POTATO BOWLS:

  • Chicken:  For extra crispy chicken, double-dip by repeating the buttermilk and flour coating process.
  • Gravy:  For a chicken gravy use chicken broth instead of beef broth.  
  • Potatoes:  Yukon gold potatoes can be used for an even creamier texture. 
  • Shortcuts:  Use store-bought mashed potatoes and pre-cooked chicken strips for a quicker meal.
