- Boil the chopped potatoes in a large pot of salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot.
- Add the milk, butter, salt and pepper.
- Mash the potatoes until smooth and creamy. Adjust the seasoning to taste.
- In a bowl, combine the flour, salt, pepper, paprika, garlic powder, and onion powder.
- Dip the chicken pieces into the buttermilk, then dredge them in the flour mixture, ensuring they are well coated.
- Heat the oil in a large skillet over medium-high heat.
- Fry the chicken pieces until golden brown and crispy, about 5-7 minutes per side.
- Remove the chicken and drain on paper towels.
- In a sauce pot, bring the beef broth to a boil.
- Whisk together the cornstarch and water to make a slurry.
- Pour the slurry into the beef broth, whisking continually whisking.
- Simmer until gravy thickens.
- Season with salt and pepper to taste.
- Divide the mashed potatoes among four bowls.
- Top each with portion of crispy chicken pieces.
- Add a scoop of corn to each bowl.
- Drizzle the gravy generously over the top.
- Sprinkle with shredded cheddar cheese.
