Chicken Cesar Salad with Anchovy-Free Dressing Recipe

I love a good salad.  Salads are great because there are so many varieties.  You are only limited by your imagination.  However, when life is crazy and I have a million things on my to-do list I like to keep my salads nice and simple.  For example, nothing beats a great Chicken Caesar Salad

With just a few simple ingredients and minimal effort you can have an AMAZING meal on your hands.  There are two secrets that make Chicken Caesar Salad truly delectable.  First of all you MUST season the chicken.  Bland chicken equals bland salad and I am not about that life.

 The second secret is all in the dressing.  Sure you can buy a great Caesar dressing from the supermarket, but why when it is so easy to make at home.  Not to mention you can make any changes you want to fit your tastes.  For example I am not a fan of the flavor of anchovy, so I omit that and add capers instead.  I can't wait to share my recipe for the perfect Chicken Caesar Salad with Anchovy-Free Dressing, so here you go!  






TIPS FOR THIS RECIPE:

Q: Can I use pre-cooked chicken, canned chicken, leftover chicken, etc?

A:  Of course!  This is your salad.  Use whatever will help you enjoy eating it. 

Q:  Can I use shredded or grated parmesan cheese for this recipe?

A:  Absolutely!  I would stick to shredded over the powder kind if at all possible though.  For flavor if nothing else. 

Q: What if I like anchovy, can I add it?

A:  Sure.  Just add 1 tsp of anchovy paste instead of the capers.

Q:  I don't really like anchovy or capers.  Do I have to add them?  

A:  Nope.  It will alter the tanginess of the dressing, but it will be delicious either way.

Q:  Do I have to use romaine lettuce?

A:  Of course not.  Use any green you like.  

Q:  Can I use bottled lemon juice?

A:  100% yes.
