 We have been getting a lot of rain this autumn which is okay by me because I love soup and NOTHING warms your soul during a rainy day like a big bowl of soup.  That's why I love this Easy Crockpot Vegan Ravioli Soup Recipe.

For this Easy Crockpot Vegan Ravioli Soup Recipe you will need a few simple ingredients:

The ingredients needed to make the Easy Crockpot Vegan Ravioli Soup Recipe


  • 1 9 oz package of Vegan Ravioli
  • 1 14 oz package of Vegan Breakfast Sausage
  • 2 Carrots, diced
  • 2 Stalks of Celery, diced
  • 1 Onion, diced
  • 4-6 Cloves of Garlic, minced
  • 1 28 oz can of Tomato Puree
  • 1 15 oz can of Diced Tomatoes
  • 4 c Vegetable Broth
  • 1 Tbsp Italian Seasoning
  • 2 c Plant Milk
  • 2 c Baby Spinach
  • Salt and Pepper, to taste

The browned vegan sausage in the bottom of the crockpot.


To begin you will need to brown the vegan sausage and place in the bottom of the crockpot. 

I used the Lightlife Gimme Lean Sausage here, but your favorite brand will work as well.  I also like to used the Beyond Meat Hot Italian Links in this as well.   


The carrots, celery, onion, and garlic in the slow cooker.


Now add the carrot, celery, onion, and garlic to the slow cooker.  


The tomato puree and diced tomatoes in the crockpot.


Add the tomato puree and diced tomatoes. 


Vegetable broth in the crockpot.


Add the vegetable broth.  

I used a powdered veggie broth base and water here, but you can use whatever you like.  


Dried italian Seasoning being added to the crockpot.

Add the Italian seasoning to the crockpot and give it all a stir.  

All the ingredients in the slow cooker stirred together so far.

Place the lid on the Crockpot and cook on LOW for 8 hours or HIGH for 4.

For the last hour of cooking add the plant milk,

Yes you can use tortellini in this as well.  I just have a hard time finding vegan tortellini where I live. 


The remaining ingredients stirred into the soup.

Five everything a stir, taste for seasoning, and let cook for one more hour.

Ingredients

  • 1 9 oz package of Vegan Ravioli
  • 1 14 oz package of Vegan Breakfast Sausage
  • 2 Carrots, diced
  • 2 Stalks of Celery, diced
  • 1 Onion, diced
  • 4-6 Cloves of Garlic, minced
  • 1 28 oz can of Tomato Puree
  • 1 15 oz can of Diced Tomatoes
  • 4 c Vegetable Broth
  • 1 Tbsp Italian Seasoning
  • 2 c Plant Milk
  • 2 c Baby Spinach
  • Salt and Pepper, to taste

Instructions

  1. Brown the vegan sausage and add to the bottom of the crockpot. 
  2. Add the carrots, celery, onion, garlic, tomato puree, diced tomatoes, vegetable broth, and Italian seasoning to the slow cooker. 
  3. Place the lid on the crockpot and cook on LOW for 8 hours or HIGH for 4 hours. 
  4. When there is 1 hour of cooking time left add the plant milk, ravioli, and spinach to the slow cooker. 
  5. Taste for seasoning and make any adjustments you see fit. 
  6. Cook for 1 more hour.
  7. Serve and Enjoy!
