It has been gray, cold, wet, and windy here in West Virginia and I am HERE FOR IT! The trees have really started to pop and that can mean only one thing, IT'S CROCKPOT SEASON! Nothing beats dinner simmering away all day and the whole house wafting in goodness. This Simple Crockpot Vegan Chicken and Dumplings Recipe checks all the boxes.
- 1 8oz bag of Soy Curls, broken into bite-sized pieces
- 1 Can of Biscuits
- 1 can of Vegan Cream of Mushroom Soup
- 2 c Cashew Cream or Vegan Heavy Cream
- 2 Carrots, diced
- 2 Stalks of Celery, diced
- 1 Onion, diced
- 4 cloves of Garlic, minced
- 8c Vegetable Broth
- Salt and Pepper, to taste
To begin pour the vegan cream of mushroom and cashew cream in the bottom of the slow cooker.
CASHEW CREAM INSTRUCTIONS:
To make your own cashew cream simply blend 1 cup of cashews and 1 cup of plant milk until smooth.
Sometimes soy curls can be rather large once they are rehydrated, so I like to break them into bite-sized pieces.
I know a lot of you are going to ask me where I get the soy curls from, so I post the Amazon link I purchased them from HERE.
Once you've finished breaking the soy curls into bite-sized pieces, place them in the crockpot as well.
Now add the onion, carrot, celery, and garlic to the slow cooker.
Simple Crockpot Vegan Chicken and Dumplings
Ingredients
- 1 8oz bag of Soy Curls, broken into bite-sized pieces.
- 1 Can of Biscuits
- 1 can of Vegan Cream of Mushroom Soup*
- 2 c Cashew Cream or Vegan Heavy Cream
- 2 Carrots, diced
- 2 Stalks of Celery, diced
- 1 Onion, diced
- 4 cloves of Garlic, minced
- 8c Vegetable Broth
- Salt and Pepper, to taste
Instructions
- Combine all of the ingredients with exception on the canned biscuits in the crockpot.
- Place the lid on the slow cooker and cook on HIGH for 4 hours or LOW for 8 hours.
- Once hour before you eat cut the biscuits into bite-sized pieced and add to the crockpot.
- Cook for 1 hour.
- Stir Everything together
- Serve and Enjoy!
Notes:
To Make the Cashew Cream:
Combine 1 cup of cashews with 1 cup of plant milk. Blend until smooth.
