For these Perfect Light and Fluffy Vegan Pancakes you will need a few simple ingredients:
- 2 cups All Purpose Flour
- 2 Tbsp Baking Powder
- 2 cups Plant Milk
- 1/4 cup Plant-Based Butter (melted) or Oil
- 1/4 cup Maple Syrup
- 1 tsp Vanilla Extract
- 1/2 tsp Salt
In a mixing bowl combine the all purpose flour, baking powder, and salt.
Whisk it together.
Next add the melted butter (or oil), maple syrup, vanilla extract, and plant milk.
Spray the pan with a little oil to keep it from sticking.
Use a 1/4 cup measuring cup and scoop the vegan pancake batter onto the pan.
This recipe should yield about 12 pancakes.
You will let the vegan pancakes cook until you see a cake-like consistency forming up the side and bubbles forming on the top. This will take about 2-3 minutes.
When this happens go ahead and flip your pancakes and cook for 2-3 minutes on the other side until the light and fluffy vegan pancakes are cook through.

Perfect Light and Fluffy Vegan Pancake Recipe
Ingredients
- 2 cups All Purpose Flour
- 2 Tbsp Baking Powder
- 2 cups Plant Milk
- 1/4 cup Plant-Based Butter (melted) or Oil

Instructions
- In a mixing bowl combine the flour, baking powder, salt, butter (or oil), maple syrup, vanilla extract, and plant milk.
- Whisk until smooth.
- Place a pan over MEDIUM/HIGH heat and allow to get hot.
- Using a 1/4 cup scoop, place the pancake batter in the pan.
- Cook until a cake-like consistency forms half way up the pancake and it begins to bubble on top, about 2-3 minutes.
- Flip and cook another 2-3 minutes until fully cooked.
- Serve with your favorite toppings and enjoy.

CAN I MAKE THESE PROTEIN PANCAKES?
Seeing as I have a 6 year old son I am ALWAYS looking for ways to get protein into his diet. So YES! You can 100% add your favorite protein powder to this recipe. We really enjoy the Vega Protein and greens powder. The only thing you will have to change to the recipe is add a little more plant milk to make sure you get the right texture in your batter.
DO I HAVE TO USE THE BUTTER AND SYRUP?
Where I have successfully omitted the syrup from this recipe, you CANNOT omit the fat. There is something about the fat that gives these light and fluffy vegan pancakes their perfect texture. Whenever I have tried to omit it they just turn out rubbery.
DO THESE LIGHT AND FLUFFY VEGAN PANCAKES FREEZE WELL?
The answer to that is a hard YES! I simply place a little wax paper in between each pancake and put them in a resealable freezer bag. When you are ready to eat them you can simple reheat in a toaster or microwave.
This does make nice fluffy pancakes. We are not a dairy free family. This recipe can be made with cow’s milk. You still get awesome, simple ingredients pancakes!
