Being a country girl from West Virginia I grew up eating simple garden pleasures such as collard greens. My grandma used to simmer these for hours with a smokey ham hock and OH MY STARS were they delicious. So once I went vegan I set out to recreate the flavors of my youth without the meat. I thought this was going to be a difficult process, but it turns out that you don't need meat to make these Easy Vegan Collard Greens tasty.
Let's get started!
For these Easy Vegan Collard Greens you will need a few simple ingredients:
To begin place a heavy bottomed pot such as a dutch oven over medium/high heat and allow it to get hot.
- 1 Bunch of Fresh Collards, stem removed and chopped
- 1 Onion, diced
- 4-6 cloves of garlic, minced
- 4 c Vegetable Broth
- 2 c Water
- 1/4 c Low Sodium Soy Sauce
- 1/3 c Apple Cider Vinegar
- 1 tsp Liquid Smoke
- 2 tsp Sazón Seasoning
- 1 tsp Salt
- 1/2 tsp Pepper
Add a little oil with the diced onion.
Sauté until soft and translucent, about 1-2 minutes.
Add the stemmed and chopped collards to the pan.
and low sodium soy sauce.
Once the pot has come to a boil lower the heat to a simmer.
These Easy Vegan Collards are Slap Ya Momma Delicious as we say in the country! They have all that smokey neatly flavor that you love without and of the fat or animal! The best part, you are encouraged to just eat the entire bowl! Go ahead, your body will thank me for it! This is the perfect side to serve along with potato pancakes and red beans! Easy Vegan Collard Greens Recipe
These Easy Collard Greens have all the smokey flavor you love without the things you don't! In fact, you're encouraged to eat the entire bowl! Your body will thank me for it!
Prep time: 10 MinCook time: 1 HourTotal time: 1 H & 10 M
Ingredients:
- 1 bunch collards
- 4 c vegetable broth
- 2 c water
- 1/4 c low sodium soy sauce
- 1/3 c ACV
- 1 tsp Liquid Smoke
- 1 packet Sazón
- 1 tsp Salt
- 1/2 tsp pepper
- 1 onion, diced
- 4 cloves garlic minced
Instructions:
- Place a heavy bottomed pot such as a dutch oven over medium/high heat and allow it to get hot.
- Add the diced onion and sauté for 1-2 minutes until soft and translucent.
- Add the garlic and cook 1 minute longer.
- Add the collards spiced, vegetable broth, water, apple cider vinegar, liquid smoke, and soy sauce to the pot. Stir together.
- Bring to a boil. Once the liquid is at a hard boil lower the heat to a simmer and cook for 1 hour.
- Serve and Enjoy!
