Easy Vegan Collard Greens Recipe

Being a country girl from West Virginia I grew up eating simple garden pleasures such as collard greens.  My grandma used to simmer these for hours with a smokey ham hock and OH MY STARS were they delicious.  So once I went vegan I set out to recreate the flavors of my youth without the meat.  I thought this was going to be a difficult process, but it turns out that you don't need meat to make these Easy Vegan Collard Greens tasty.

Nope, I have a secret ingredient that will give them that smokey flavor we love without all the fat that we don't (and the animal meat).  This is going to blow your mind and I can't wait to share with with you so...

Let's get started!
For these Easy Vegan Collard Greens you will need a few simple ingredients:

  • 1/4 c Low Sodium Soy Sauce
  • 1/3 c Apple Cider Vinegar
  • 1 tsp Liquid Smoke
  • 2 tsp Sazón Seasoning
  • 1 tsp Salt
  • 1/2 tsp Pepper

To begin place a heavy bottomed pot such as a dutch oven over medium/high heat and allow it to get hot.
Add a little oil with the diced onion.
Sauté until soft and translucent, about 1-2 minutes.

Add the garlic to the pan and sauté another minute.

Add the stemmed and chopped collards to the pan.

Pour in the vegetable broth,

salt, pepper, and sazón seasoning,

apple cider vinegar,

liquid smoke,

and low sodium soy sauce.

Stir everything together and

bring to a boil.
Once the pot has come to a boil lower the heat to a simmer.

Simmer for one hour.
