One thing that I have learned whilst trying to eat healthier is that CAULIFLOWER IS KING! Seriously! I have found that it is a brilliant dupe for just about any of lovely carb laden dishes you long to devour during the holidays. That's why, when I was trying to think of something that would be perfect to make a healthy version of stuffing for Christmas dinner, Cauliflower Stuffing was the fist thing that came to mind!
I realize I am not the first person to come up with this concept, but I have to say that this recipe is amazing, and you won't believe how similar to the real thing it tastes! I can't wait to share it with you so...
Let's Get Started!
Easy Cauliflower Stuffing Recipe:
*Prep Time: 10 min *Cook Time: 20 min *Difficulty: Easy *Servings: 4-6
Ingredients:
- 1 head of Cauliflower, finely chopped
- 2 Carrots, peeled and diced
- 2 stalks of Celery, diced
- 1 Onion, diced
- 4 cloves of Garlic, minced
- 1 quart of Cremini Mushrooms, diced
- 1 sprigs of Rosemary, minced
- 1/2 tsp Ground Sage
- 1 c. Vegetable Stock (or whatever kind of stock you want)
- Salt and Pepper
To begin, prep all of your vegetables.
This stuffing actually comes together rather quickly and this will keep the whole process running smoothly.
Next place a deep skillet over medium/high heat and add a little bit of extra virgin olive oil.
Once the pan is hot add the carrots, celery, and onion to the pan.
Sauté until the vegetables are tender and the onions are soft and translucent.
Next add the mushrooms to the pan and sauté until tenter, about 2 minutes.
Now add the cauliflower,
rosemary, sage,
salt, and
pepper.
Stir everything together and pour in the vegetable stock.
Cover and let cook for 15 minutes and your stuffing is ready to go.
HOWEVER, I went a little step further and put the stuffing into a baking dish and put under the broiler until the top bits were brown and crispy!
