Crockpot Garlic and Rosemary Beef Roast Recipe

I hope you've been enjoying all of these delicious, guilt-free, holiday recipes this month.  I have to be honest with you when I say that I've been amazed at how delicious and decadent healthy eating can be.  Well, today's recipe is no different!  We're talking main courses today with my super simple Crockpot Garlic and Rosemary Beef Roast.  


Not only is this recipe easy and flavorful, but it is inexpensive as well.  That's right!  I know you are going to love this recipe so...

Let's Get Started!

Crockpot Garlic and Rosemary Beef Roast:
*Prep Time: 10 min.  *Cook Time: 4-8 hrs *Difficulty:  Easy  *Servings: 6-8

Ingredients:
Confession, I made this two times because the first time I used the wrong cut of beef and it fell apart.  So that is why this picture doesn't match the actual recipe.  Who says bloggers never test things.

  • 3 lb Bonless Eye of Round Beef Roast
  • 3 sprigs of Fresh Rosemary, minced
  • 6 Cloves of Garlic, minced
  • 1 tsp. Kosher Salt
  • 1 tsp. Pepper
  • 1/4 c Extra Virgin Olive Oil
  • 1/4 c Balsamic Vinegar


To begin you will need to prepare your rosemary.  Simply hold the sprig at the top with one hand.  Then, using the other hand, pull down the spring removing the leaves. Chop through the leaves finely with your knife.


In a small bowl combine the rosemary, garlic, oil, salt, and pepper.
Mix it all together.


Now it is time to prepare your roast.
You don't have to do this, but I like to use kitchen twine to tie around the roast to give it a little extra support.


Now rub the "paste" all over the roast.


You will need to brown the roast in a hot skillet for 2-3 minutes on each side.

Now before you say it, YES YOU HAVE TO DO THIS PART!
I mean, no, you don't HAVE to, but this is Christmas dinner for heaven's sake.  It's these simple steps that make all the difference in the flavor.  So take the extra few minutes and brown your meat.


Once you have browned your meat, place the roast into the crockpot.
Now pour the balsamic vinegar into the pan to deglaze it.
Scrape up all the little brown bits and pour into the bottom of the crock pot.

Place the lip on the crockpot and cook on HIGH for 4 hours or LOW for 8 hours.

Let your roast rest for 20 minutes before slicing.


And there you have it!  A mouthwatering, delicious holiday roast.  The beef itself is packed full of flavor, but the drippings...OH MAN!  They make the best gravy!  So this year don't let the idea of Christmas dinner overwhelm you.  Give this delicious Crockpot Garlic and Rosemary Beef Roast a try!

PRINTABLE RECIPE

Ingredients:
  • 3 lb Bonless Eye of Round Beef Roast
  • 3 sprigs of Fresh Rosemary, minced

Directions:
  1. Combine the rosemary, garlic, oil, salt, and pepper into a small bowl and mix together into a paste. 
  2. Rub the past all over the roast.  
  3. Place a skillet over high heat. 
  4. Once the pan is hot brown the roast on all sides. 
  5. Place the browned roast into the crockpot. 
  6. Pour the vinegar into he hot skillet and deglaze the pan.  
  7. Pour the deglazed pan drippings into the bottom of the crockpot.  
  8. Place the lid on the crockpot. 
  9. Cook on HIGH for 4 hours or LOW for 8 hours.  
  10. Serve and Enjoy!
