Easy Crockpot Herbed Chicken Dinner

My adventures in crock pot cooking continue as I'm experimenting with it more and more.  There have been some failures along the way, but there have been some real gems as well, and my Easy Crock Pot Herbed Chicken Dinner is definitely one of them.

This Crock Pot Herbed Chicken Dinner is the best of both worlds.  Its super simple to make, and the best part it it's healthy too! I can't wait to share it with you, so...

Let's Get Started!

Easy Crock Pot Herbed Chicken Dinner:
*Prep Time: 10 minutes  *Cook Time: 3-6 hours *Difficulty:  Easy  *Servings:  4-6

Ingredients:

All of the ingredients needed to make the Easy Crock Pot Herbed Chicken Dinner.

  • 4-6 Boneless, Skinless Chicken Breasts
  • 3 Carrots, cut into bite-sized pieces
  • 1 Onion, sliced
  • 3 Celery Stalks, cut into bite-sized pieces
  • 2 c. Low Sodium Chicken Stock
  • 1 Tbsp Dried Italian Seasoning
  • 1 tsp Salt
  • 1/2 tsp Black Ground Pepper
To begin you will obviously need a crock pot or slow cooker.  I don't use anything super fancy, just your standard 6 qt. Oval variety.  


All of the vegetables cut up and ready to go into the crockpot.

Next, take a moment and chop all of your vegetables.  The one change I would have made to this dish, if I would have had them at the time, is add some red potatoes to it.

Now place all of your vegetables in the bottom of the crock pot.

Then, place the chicken on top of the vegetables.

The Italian seasoning sprinkled all over the chicken.

Now sprinkle your Italian seasoning all over the chicken.

Salt and pepper sprinkled in the crock pot over the chicken.

Next season the chicken with the salt and pepper.

 Pour the low-sodium chicken stock over the chicken.

The dial on the crock pot set to HIGH.

Then place the lid on the crock pot, set the temperature to HIGH, and let it cook for 3-4 hours.
If you want, you can set the temperature to LOW and let it cook for 6-8 hours.
This is really not a fussy dish.

Now gently remove the chicken from the crock pot (it will be VERY tender), strain the vegetables from the broth, and you are ready to go!  Oh!  And before I forget, don't throw that broth away, it makes a wonderful gravy for the mashed potatoes you can serve with it!  I actually whipped up a nice side salad and it was absolutely mouthwatering.  The chicken was moist and full of flavor.  The vegetables were tender and savory.  It was a great meal and so easy.  You definitely need to give this Easy Crock Pot Herbed Chicken Dinner a try, and I would love to hear what some of your favorite crock pot dinners are so leave them in the comments below!

PRINTABLE RECIPE

Ingredients:

Directions:
  1. Chop all of the vegetables for the crock pot.* 
  2. Place the vegetables in the bottom of the crock pot. 
  3. Place the chicken on top of the vegetables.
  4. Sprinkle the Italian seasoning, salt, and pepper all over the chicken.
  5. Pour the chicken stock over the chicken. 
  6. Place the lid on the crock pot and set the temperature to HIGH. **
  7. Let cook for 3-4 hours.
  8. Remove the chicken from the crock pot along with the vegetables.***
  9. Serve and Enjoy!
  * You can also add potatoes to the vegetables.
 **If you are going to be out for longer than 3-4 hours, set the temperature to LOW and cook for 6-8   hours.
***Don't throw out the broth.  You can pour it through a fine mesh strainer to remove all the little bits from cooking, and use it has gravy for mashed potatoes.
