Recipe for Cobb Salad

Don't you love when a recipe evokes a great memory?  Me too.  This Recipe for Cobb Salad does just that.  The first time I ever had a Cobb Salad was at Bob Evans in Delaware, OH with my friend Angie.  To be honest, I'm not sure I'd ever been to a Bob Evans before that (Boy how times have change on that front), so I had no idea what to get.  It was a hot summer day, and I didn't want anything too heavy.  She looks at me and says "You HAVE to try the Cobb Salad here"  She told me what all was in it, and I thought "Sure, why not."  and that was the beginning of my life long love affair with Cobb Salad.  It is fresh, yet, hearty and filling.  Savory, sweet, salty, all wrapped up in a bowl.  *Sigh*  I LOVE Cobb Salad and I can't wait to share with you how YOU can make it at home.

Recipe for Cobb Salad:
*Prep Time: 20 min.  *Cook Time:  --  *Difficulty:  Easy  *Servings:  4-6

Ingredients:

  • 2 pieces of Grilled Boneless, Skinless, Chicken Breasts, sliced
  • 4 slices of Cooked Bacon, chopped
  • 4 Eggs, hard boiled
  • 1 5 oz. container of Crumbled Blue Cheese
  • 1 container of Mixed Spring Greens
  • 2 Tomatoes, diced
  • 2 Green Onions, sliced

To begin you will need to chop the lettuce into bite-sized pieces.

Place the chopped lettuce into the bottom of the bowl.

The next step is to slice the chicken.

To prepare this chicken I seasoned it with salt, and lemon pepper seasoning.
Then, on a medium/high grill I cook it for 6-8 min. on each side.

Place the sliced grilled chicken, in a single row, at one end of the bowl.

Now you can dice the tomatoes and add those in a row beside the chicken.

Now add the blue cheese in a row beside the tomatoes, followed by the chopped bacon.

To prepare the bacon I placed it onto a foil lined baking sheet, in a 425 degree oven, for 20 minutes.

Next you will slice the hard boiled eggs and place them in one final row in the bowl.

To hard boil the eggs I place them in a pan of cold water, brought the water to a boil, covered the pan, turned off the heat, and let them sit for 20 minutes.

Top the entire Cobb salad with the sliced green onions.
