Vegetarian Pho

Vegetarian Pho

It's Meatless Monday, and do I have a treat for you!

One of the things I hear people say about vegetarian cooking is that it is boring, or that it is too expensive.  Well, today's recipe is about to prove both of the theories wrong!  Why?  Because this Vegetarian Pho only requires a few simple ingredients, and it has flavor that is out-of-this-world!  I can't wait to share it with you, so

Let's Get Started!

Vegetarian Pho:
*Prep Time: 10 min.  *Cook Time:  30 min  *Difficulty:  Easy  *Servings:  4-6

Ingredients:


  • 8 c. Vegetable Stock (You can also use chicken stock)
  • 3 Carrots, julienned
  • 6 Green Onions, sliced
  • 5 Cremini Mushrooms, sliced
  • 6 Basil Leaves
  • 4-6 Cloves of Garlic, minced
  • 1 inch Knob of Fresh Ginger, minced
  • 1 Cinnamon Stick
  • 1 Star Anise
  • 1 tsp. Chili Flake
  • 2 tsp. Kosher Salt
  • Pho Rice Noodles
  • (Toppings) Fresh Cilanrto, Jalepeno Slices, Bean Sprouts, Lime Wedges, and Srircha


To begin, place a heavy soup pot over medium high heat, and add 2-3 tbsp of extra virgin olive oil.
Let the pot get hot.


Next add the sliced green onions and garlic to the pot.
Cook until tender and translucent.  This will only take 1-2 minutes.


Grate in the ginger.


Now you can add the Vegetable stock.


Add the salt.


Add the cinnamon stick and star anise.


Add the basil leaves.


And chili flake.
Bring to a boil, then lower the heat to a simmer.
Simmer for 20 minutes.


After the 20 minute simmer, add the rice noodles,


Carrots,


and mushrooms.
Cook for 4-6 more minutes.

Vegetarian Pho

Your delicious Vegetarian Pho is now ready!
I love to serve it with sliced jalapeno, fresh cilantro, bean sprouts, lime wedges, and of course sriracha!

Directions:

  3. Add the grated ginger to the pot. 
  4. Add the Vegetable or Chicken Stock to the Pot.
  5. Add the basil leaves, cinnamon stick, star anise, chili flake, and kosher salt.
  6. Bring to a boil, then lower the heat to a simmer.  Cook for 20 minutes.  
  7. After the 20 minute simmer add the rice noodles, carrots, and mushrooms.  Cook for another 4-6 minutes, until the noodles are white.  
  8. Serve in a large bowl with fresh cilantro, lime wedges, jalapeno slices, bean sprouts, and sriracha.  
  9. Enjoy!
