One of my very favorite vegetables on this planet has to be asparagus! I think I could literally eat it by the pounds. I realize that would not be good for me, but truth is truth and I am about nothing, if not keeping it real on here. *lol* Asparagus can be a little intimidating, but when done right, there are few vegetables that can touch it. Also, if you are trying to broaden your child's veggie horizon, asparagus is a great place to start. They have a mild flavor, similar to a green bean.
Here is one of my favorite ways to prepare this veggie delight. It's fast, easy, and on the table in no time! Let's get going!
Oven Roasted Asparagus:
*Prep-Time: 2 minutes *Cook Time: 10-12 minutes *Difficulty: Easy *Servings: 4-6
Here is what you will need:
- 2 lbs. of Fresh Asparagus
- 2 tbsp. Olive Oil
- Salt and Pepper
Tools you will need:
- Chef's Knife
- Cutting Board
- Making Dish
To prepare your asparagus, you will take one rod and bend it till it snaps.
The bottom is a bit woody and fibrous, not really good for eating.
You can discard it.
Use your snapped rod as a guide, and trim the rest of your asparagus.
Place, in a single layer, in your baking dish, and drizzle with oil.
Season with salt and pepper.
Mix around to evenly coat.
Return to single layer.
And place in a 450 degree oven for 10-12 minutes.
YUM!
Serve with your favorite entrée and enjoy!
