It is a cold a rainy in the Mid Ohio Valley. Don't get me wrong. I love days like this. First of all, it is a sure sign that Spring is setting in. Secondly, this is the kind of rainy day where you stay in your jammies, fire up the coffee pot, and bake something warm, gooey, and delightful!
Usually I am not a fan of baking. This is to my husbands dismay I assure you, but this summer, while at home groups, I tried the BEST cobbler that I have ever put in my mouth! I am not exaggerating! Of course, like any good country girl, I asked my friend Dava for the recipe. When she told me how she made it, I decided the only thing better than the cobbler itself, was how easy it was to make! This is now my go-to dessert for EVERYTHING! I can't wait to share it with you!
Dava's Deliciously Simple Cobbler:
*Prep Time: 5 minutes *Cook Time: 30-45 minutes *Difficulty: Easy *Servings: 8-12
Here is what you will need:
- 1 lg. bag of sugar cookie mix
- 1 stick of butter, softened
- 1 egg
- 2 6 oz. containers of blackberries *or any fruit, fresh or frozen
- Brown sugar
- Cinnamon
Tools you will need:
- Mixing Bowl
- Rubber Spatula
- 9x13 baking dish
Let's get started!
First you are going to want to pre-heat your oven to 350 degrees.
In your mixing bowl, add your cooking mix, softened butter, and egg.
Using the spatula, mix everything together well.
I would like to say that you can use the refrigerated tube of dough if you like,
you can even use homemade, but for some reason I have found the mix works best.
This is a great trick!
Use your butter paper to grease your baking dish.
Take HALF of your cooking mix and sprinkle on the bottom of the dish.
Next, add your blackberries.
One of the best things about this cobbler is that you can use
ANY fruit you want! Fresh or frozen!
I KNOW RIGHT!
It just keeps getting better!
Then sprinkle a layer of brown sugar.
There is no measurement here. Just make sure you cover the pan.
Now, sprinkle with cinnamon.
Again, no measurements. Just cover the dish.
Now, dollop the rest of your cookie mix on top.
Place on the middle rack of your pre-heated oven.
Set your timer for 30 minutes.
Now, this is just to start out. I actually baked mine for 40.
Sometimes it will be finished in 30, sometimes 45.
It depends on the mix you use.
When the crust is firm and golden, it is finished!
Serve this up with a scoop of French Vanilla ice cream and you are in Heaven!!

Directions:
- Preheat your oven to 350 degrees.
- Combine your cookie mix, softened butter, and egg in a mixing bowl.
- Mix well.
- Using your butter wrapper, grease your baking dish.
- Dollop HALF of your cookie dough all over the bottom of the dish.
- Add your fruit.
- Layer with brown sugar.
- Sprinkle with a layer of cinnamon.
- Dollop the other half of the cookie mix on top.
- Put on the center rack of your oven.
- Bake 30-45 minutes until crust is firm and golden.
- Serve with a scoop of your favorite ice cream.
