Hey Y'all and welcome to my West Virginia kitchen! When fall rolls in there's no shortage of pumpkin- themed recipes, but few are as fun, fast, and festive as this Pumpkin Pizza Quesadilla!
Perfect for Halloween parties, movie nights, or a quick weeknight dinner that brings a little seasonal magic to your table. Oh, and did I mention that my son made and photographed this himself? I can't wait to share this one with you so...
Let's get started!
INGREDIENTS YOU'LL NEED:
- 4 Tortillas (flour or whole wheat)
- Pizza Sauce
- Mozzarella Cheese, shredded
- Pepperoni (we like to use the minis)
HOW TO MAKE A PUMPKIN PIZZA QUESADILLA:
- Step 1: Prep the Tortillas- Lay two tortillas flat. On one tortilla, use a small pairing knife of kitchen shears to cut out a Jack-o-Lantern face. Think triangle eyes, a nose, and a jagged smile! Don't worry about being perfect. The imperfections make it more charming and "homemade spooky."
- Step 2: Build the Base- Place the uncut tortilla on a skillet over medium heat. Spread a thin layer of pizza sauce.
- Step 3: Add the Toppings- Sprinkle generously with mozzarella cheese and add pepperoni slices (or any toppings you like).
- Step 4: Top It Off- Carefully place your Jack-o-Lantern cut-out tortilla on top of the cheese and toppings.
- Step 5: Cook Until Golden- Cook for 2-3 minutes per side, gently pressing with a spatula, until the tortilla turns crisp and golden brown and the cheese is melted and bubbly.
- Step 6: Slice and Serve- Remove from the skillet, let it cool slightly, and then slice into wedges. Serve with extra pizza sauce for dipping or "pumpkin guts", if you're keeping it spooky!
JACK-O-LANTERN FACE IDEAS:
- Classic Pumpkin: Two triangle eyes and a big toothy grin.
- Goofy Grin: One round eye, one triangle, and a crooked smile.
- Spooky Style: Slanted eyes and a jagged mouth for a scarier look.
TIP: You can even brush the top tortilla lightly with olive oil and sprinkle it with paprika before cooking to give your pumpkin "face" an orange glow!
FUN VARIATIONS:
- Veggie Monster: Add bell peppers, mushrooms, and black olives for a colorful face.
- Spicy Pumpkin: Mix pumpkin purée with hot sauce for a sweet-heat combo.
- Cheesy Explosion: Use a blend of mozzarella and cheddar for an extra gooey melt.
- Mini Pumpkins: Use smaller tortillas and let kids make their own silly Jack-o'-Lantern faces!
TIPS FOR THE BEST PUMPKIN QUESADILLA:
- Use low-moisture mozzarella to prevent sogginess.
- Cook on medium heat so the cheese melts evenly without burning the tortilla.
- For crisp edges, lightly butter or spray the pan before cooking.
And as always...
Happy Eatin' Y'all!
