THE ULTIMATE CAULIFLOWER GRATIN RECIPE:

Ingredients:
  • 1 Large Head of Cauliflower, cut into florets
  • 2 Tbsp Butter
  • 2 Tbsp All-Purpose Flour (or almond flour for gluten-free)
  • 1 1/2 cups Milk (whole, almond, or oat milk)
  • 1 cup Shredded Cheese (Gruyère, Cheddar, or Parmesan)
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Nutmeg (optional)
  • Salt and Pepper, to taste
  • 1/2 cup Breadcrumbs or Crushed Pork Rinds
  • 1 Tbsp Olive Oil or Melted butter (for toppings)





Instructions:
  1. Preheat the Oven:  Set your oven to 375°F (190°C).
  2. Prepare the Cauliflower:  Blanch cauliflower florets in salted, boiling water for 4-5 minutes.  Drain and pat dry.  
  3. Make the Sauce:  In a medium saucepan, melt butter over medium heat. Whisk in flour, cooking for 1 minute. Slowly add milk, whisking constantly to avoid lumps.  Stir until thickened, then add garlic powder, nutmeg, salt and pepper.  Mix in 3/4 cup of cheese until melted.  
  4. Assemble the Gratin:  Arrange cauliflower in greased baking dish.  Pour the cheese sauce over the florets.  Sprinkle the remaining cheese on top.  
  5. Add the Topping:  In a small bowl, mix breadcrumbs with olive oil or melted butter.  Spread evenly over the dish. 
  6. Bake:  Bake for 25-30 minutes or until the top is golden and bubbling.  Let it cool slightly before serving.
