INGREDIENTS:
- 2 (1 lb.) Steaks (ribeye, sirloin, or your favorite cut)
- 1 package (20 oz) cheese tortellini (frozen works best)
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 lemon (zested and juiced)
- 1 heaping Tbsp Garlic (minced)
- 1 stick unsalted butter
- 1 tsp ground black pepper
- Salt to taste
- Fresh parsley (chopped, for garnish)
INSTRUCTIONS:
Preparing the Steak:
Grill Option:
- 30 minutes before you are going to cook your steak remove it from the refrigerator and let it come to room temperature.
- Preheat your grill to medium-high heat.
- Rub the steak with salt, pepper, garlic powder, and onion powder.
- Place the steak on the grill and cook for 3-4 minutes per side for medium, or until it reaches your desired level of doneness. See chart below.
- Remove from the grill and let rest for 5 minutes before slicing into thin strips.
Pan-Seared Options:
- 30 minutes before you are going to cook your steak remove it from the refrigerator and let it come to room temperature.
- Heat a large skillet over medium-high heat and add 2 Tbs olive oil.
- Rub the steak with salt, pepper, garlic powder, and onion powder.
- Place the steak in the hot pan and cook for about 3-4 minutes per side for medium, or until it reaches your desired level of doneness. See chart below.
COOKING TIMES AND TEMPERATURES:
Rare 120°F-125°F: 1-2 minutes on each side.
Medium Rare 130°F-135°F: 2-3 minutes on each side.
Medium 140°F-145°F: 4 minutes on each side.
Medium Well 150°F-155°F: 4-6 minutes on each side.
Well Done 160°F and above: 6-8 minutes on each side.
Use a meat thermometer to check the internal temperature for accuracy.
PREPARING THE PASTA AND SAUCE:
