Welcome to my West Virginia Kitchen! I love take 2 recipes. You know, cook once, eat twice. However, that doesn't always mean leftovers in the traditional sense. Take my Grilled BBQ Chicken Snack Wraps for example. I grilled up an entire package of chicken for one meal, but used the excess chicken for this. It saved time and money.
Let's Get Started!
WHY YOU'LL LOVE THIS RECIPE:
These Grilled BBQ Chicken Snack Wraps are not only delicious, but also very versatile and easy to customize. They're great for meal prep, making them a perfect option for busy weekdays. Plus, they're a healthier alternative to fast food (cheaper too), providing a balanced combination of protein, vegetables and whole grains.
INGREDIENTS:
For these Grilled BBQ Chicken Snack wraps you will need to gather a few simple ingredients:
- 2 Boneless, Skinless Chicken Breasts
- 1 cup BBQ Sauce (your favorite brand)
- 4 flour Tortillas
- 1 cup Shredded Cheddar Cheese
- 1 cup Shredded Lettuce
- 1/4 cup thinly sliced Red Onion
- Ranch Dressing (your favorite brand)
- BBQ RUB
- Dill Pickle Slices (optional)
INSTRUCTIONS:
- Prepare the Chicken: Preheat your grill to medium-high heat. Season the chicken breasts with the BBQ rub. Grill the chicken for 4 minutes per side. Then brush the top with the BBQ sauce, flip and cook 2 more minutes. Brush the top half with BBQ sauce, flip and cook for 2 more minutes on the other side. Brush the top with BBQ sauce again and remove from the grill. Let rest for 5 minutes before slicing.
- Assemble the Wraps: Lay out the flour tortillas on a clean surface. Evenly distribute the shredded lettuce, shredded cheddar cheese, sliced red onion, and pickles among the tortillas.
- Add the Chicken: Cut the BBQ chicken breasts into strips. Place the BBQ chicken trips over the veggies on each tortilla. Drizzle with some ranch dressing.
- Wrap it Up: Fold the sides for each tortilla inward, then roll them up from the bottom to create a secure wrap.
- Serve and Enjoy: These wraps are perfect as a standalone meal or paired with chips and a side of fruit.
- Marinate the Chicken: For extra flavor, marinate the chicken in BBQ sauce for at least an hour before grilling.
- Add Crunch: For a crunchier texture, consider adding sliced bell peppers or cucumbers.
- Spice it Up: If you like a bit of heat, add some sliced jalapeños or a dash of hot sauce to your wraps.
The next time you're in need of a quick and tasty meal, give these grilled BBQ Chicken Snack Wraps a try. With their delightful mix of flavors and textures, they're sure to become a regular in your meal rotation.
And as always...
Happy Eatin' Y'all!
