- 2 Boneless Skinless Chicken Breasts, sliced in half
- 8 Slices of Bacon
- 4-6 slices of Monterey Jack Cheese
- 1 (8 oz) container of Brown Mushrooms, sliced (optional)
- 2 Tbsp Butter
- 1 Tbsp Olive Oil
- 1/4 tsp each Garlic Powder, Onion Powder, and Paprika
- Salt and Pepper, to taste
- Sliced Green Onions (for garnish)
- 1/2 cup Mayonnaise
- 1/4 cup Dijon Mustard
- 1/4 cup Honey
- 1 Tbsp Lemon Juice
- Preheat your oven to 400°F (204°C)
- In a large skillet, cook the bacon until crispy. Remove and place on a paper towel to drain excess grease. Once cooled, crumble the bacon into bite-sized pieces.
- Add the butter to the same skillet you cooked the bacon in and let melt.

- Brush a generous amount of the honey mustard sauce over each chicken breast.
- Layer the cooked mushrooms over the chicken breasts.
- Cover the chicken breasts with the Colby Jack cheese.
- Layer the crumbled bacon over the chicken breasts.
- Bake in the oven for 10 minutes or until the cheese is melted and bubbly, and the internal temperature is 165°F
- Remove from the oven and let rest for a few minutes.
- Garnish with the chopped green onions before serving.
