INGREDIENTS:
  • 16 oz Pasta of your choice
  • 1 lb Boneless, Skinless Chicken Breast, diced
  • 4 cups Chicken Broth
  • 8 oz Cream Cheese, room temperature
  • 1 package of Ranch Seasoning Mix
  • 4-6 Slices of Bacon, chopped
  • 2 cups Cheddar Cheese, shredded
  • Sliced Green Onion for garnish

INSTRUCTIONS:

Step 1:  Cook the Bacon

In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy.  Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the pan.

Step 2:  Sauté the Chicken:

Add the diced chicken to the pan with the bacon grease.  Season with salt and pepper and cook until the chicken is browned and cooked through, about 5-7 minutes.  Remove the chicken and set aside with the bacon.

Step 3:  Cook the Pasta:

Pour the uncooked pasta into the pan and add the chicken broth.  Bring to a boil, cover, and cook for 10 minutes, stirring occasionally.

Step 4:  Combine Ingredients:

After 10 minutes add the chicken, ranch seasoning, and cream cheese.  Simmer another 5 minutes, stirring occasionally.

Step 5:  Serve and Enjoy:

Add the shredded cheddar cheese and chopped bacon to the pan.  Stir and garnish with sliced green onion and ENJOY!

TIPS FOR THE BEST ONE POT PASTA:

  • Use Fresh Ingredients:  Things like using fresh green onions and high-quality cheese can make a big difference in the flavor.
  • Stir Frequently:  To prevent the pasta from sticking to the pot and ensure even cooking, stir the pasta frequently.
  • Adjust Consistency:  If the pasta seems too thick, you can add a splash of milk or chicken broth to reach your desired consistency.

VARIATIONS:

  • Vegetarian Option:  Substitute chicken with your favorite vegetables like broccoli, bell peppers or plant-based chicken substitute.  Use vegetable broth in place of the chicken broth.
  • Spicy Kick:  Add a pinch of red pepper flakes or a diced jalapeño for some heat.
  • Different Cheese:  Experiment with difference cheeses like mozzarella or gouda for a unique flavor twist.

    1. I'm sorry, I was going to mention that if you wanted the cheese to brown you could put it under the broiler. You would need an oven safe pan for that.
