Smothered Breakfast Burrito Recipe: A Perfect Hearty Morning Meal

Hearty and Satisfying:  Packed with protein from the eggs and sausage, this breakfast burrito is a complete meal that will keep you full and energized.  

Easy to Customize:  Swap out the sausage for bacon, chorizo, or a vegetarian option like black beans.  Add your favorite toppings like hot sauce or jalapeños for a little kick.  

Perfect for Meal Prep:  Make these burritos ahead of time and freeze them for a quick and easy breakfast through out the week.  Just add the ready when you are ready to eat.  

Delicious and Flavorful:  The combination of cheesy, savory fillings smothered in rich and creamy sausage gravy makes every bite a delight!  


  • 6 Grande-Size Flour Tortillas
  • 1 lb Breakfast Sausage, fully cooked
  • 6 Eggs
  • 2 cup Shredded Cheddar Cheese
  • 1 (15 oz) can of Sausage Gravy
  • 1/2 cup Milk 
  • Salt, Pepper, and Garlic Powder, to taste


1.  Preheat the Oven:  Preheat the oven to 350°F/175°F.

2.  Cook the Meat:  In a large skillet, heat tablespoon of olive oil over medium heat.  Cook the sausage until brown and no longer pink.  

3.  Cook the Eggs:  In a bowl, whisk the eggs with a pinch of salt and pepper.  Pour the eggs into the skillet with the sausage, stirring frequently, until the eggs are scrambled and fully cooked.  Remove from heat and set aside.

4.  Assemble the Burritos:  Lay each tortilla flat and sprinkle a portion of the shredded cheese down the center.  Top with a couple scoops of the egg and sausage mixture.  Roll the tortillas tightly.  Place the burritos, seam side down, in a greased 9x13 casserole dish.  

5.  Smother the Burritos:  Mix the milk and canned sausage gravy together.  Pour over the burritos and top with shredded cheese.  

6.  Bake:  Bake the burritos in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.  

7.  Serve:  Remove the burritos from the oven and let them cool slightly.  Serve smothered burritos hot, and enjoy!

  • Tortilla Warmth:  Warming the tortillas slightly before filling them makes them more pliable and easier to roll.  
  • Cheese Variety:  Feel free to experment with different cheese like pepper jack, Monterey jack, or even spicy queso fresco.  
  • Fresh Ingredients:  Use fresh, high-quality ingredients for the best flavor and texture.  


Q:  Can this be made vegan/vegetarian?

A:  Absolutely!  Simply use something like Just Egg or a tofu scramble as your egg base.  Then you can use your favorite vegan sausage or bacon.  For the gravy just use your favorite plant milk to make a homemade version.

Q:  Do I have to use sausage and egg?  

A:  No, the beauty of this recipe is that you can use any breakfast burrito filling that makes your little heart happy.
