Easy Instant Pot Vegan Mummy Alfredo Recipe


October is here and I would be lying if I said I wasn't excited about it!  If you have followed me on social media for any amount of time, you know I LOVE making fun and festive meals for my family during the Halloween season.  So this year I have decided to postpone my tradition Crocktober recipes and take a week to share some of my favorite, family friendly, Halloween ones.  To kick things of I am sharing this adorable Easy Instant Pot Vegan Mummy Alfredo Recipe

With only 3 ingredients and 8 minutes you are going to have a wickedly delightful meal on the table that EVERYONE will enjoy!  I can't wait to share it with you so...

Let's Get Started!

For this Easy Instant Pot Vegan Mummy Alfredo Recipe you are going to need a few simple ingredients:

  • 1 lb. of Fettuccini Pasta 
  • 4 c Water
  • 1 16 oz Jar of Alfredo Sauce 
  • Manzanilla Olives
If you saw my last post you know that my new favorite way to make pasta is in the instant pot.  Well, nothing has changed so that's how we are going to prepare this recipe today.  
Pasta in the instant pot covered with water.Italians don't come for me, but you are going to break the fettuccini noodles in half and place in the instant pot.  If you don't the pasta will not fit in the insert correctly and therefore not cook.  

Pour in the water making sure the pasta is just covered. 

I know what you are thinking; "Do I HAVE to use fettuccini noodles here?"  The answer is YES! I mean, if you are just making pasta Alfredo in your instant pot then no, but if you are making Mummy Alfredo the fettuccini noodles are key to getting that mummy wrap effect. 

Also, you CAN use gluten free pasta with this method, but unlike traditional pasta you will need to drain and rinse.   
The instant pot valve set to sealing.Place the lid on the pressure cooker and set the valve to SEALING.  
The instant pot set on HIGH pressure for 8 minutes.Press the PRESSURE COOK button and set the timer to 8 minutes.  

After the instant pot comes to pressure and cooks for the 8 minutes do a quick release by turning the valve to VENTING.  
The pasta fully cooked in the instant pot with a little water remaining.Remove the lid and give the pasta a stir.  
Let sit for 2-3 minutes.  No need to drain the pasta will absorb most of the liquid and what is left just blends into the sauce. 
The vegan alfredo sauce poured into the pot with the pasta.Speaking of the sauce, pour the alfredo sauce of your choice over the noodles.  

I used my Easy 15 Minute Vegan Alfredo Sauce Recipe here, but you can use any alfredo sauce you like.  Vegan, not vegan, jarred, homemade, whatever works for you.  I even have a traditional alfredo sauce recipe HERE.  
The vegan alfredo sauce stirred into the pasta.Stir the sauce gently into the pasta and we are ready to plate!

Place the fettuccini noodles in a circular shape on the plate.  For the best effect I like to place some of the noodles horizontally across the plate to really make it look like a mummy head.  Now use two of the olives as eyeballs and it's time to eat!

This Easy Instant Pot Vegan Mummy Alfredo Recipe was a HUGE hit at my house. My picky eater even asked for seconds!  It's great served with a simple side salad, but if you wanted to get really festive you could serve it up with a side of Zombie Eyes (peas) or Witches Fingers (green beans).  No matter what way you serve it, vegan or not, everyone in your family is going to love this holiday dish so get in the kitchen and give it a try TONIGHT!

Easy Instant Pot Vegan Mummy Alfredo

A SPOOKTACULAR take on traditional fettuccini alfredo, this Vegan Mummy Alfredo uses 3 ingredients and is ready in 10 minutes using the Instant Pot.
Prep time: 2 MinCook time: 8 MinTotal time: 10 Min

Ingredients

  • 1 lb. of Fettuccini Pasta
  • 4 c Water
  • 1 16 oz Jar of Alfredo Sauce
  • Manzanilla Olives

Instructions

  1. Break the pasta in half and place in the instant pot. 
  2. Pour the water over the pasta.
  3. Place the lid on the pressure cooker and make sure the valve is set to SEALING. Push the pressure cook button and set the timer to 8 minutes.  The Instant Pot will then come to pressure and begin cooking.
  4. Once the 8 minutes has elapsed turn the valve to VENTING and do a quick release.
  5. When all the pressure has released remove the lid and gently stir the pasta.  Let the pasta sit for 2-3 minutes.  
  6. Add the alfredo sauce of your choice to the pasta and stir until coated.  
  7. Place the fettuccini alfredo on the plate in a circle.  Take two of the olives and position as eyeballs.  
  8. Serve and Enjoy!

  1. So, most of the time I like to put a twist on recipes and make them healthier, but this Instant Pot Vegan Mummy Alfredo Recipe is quicker and more family friendly than our usual recipe. Hopefully it will make everyone happy!
