Vegan Ravioli with a Mushroom Pan Sauce Recipe

Over the years you have seen a variety of recipes from me.  Some more intricate, some incredibly simple.  This recipe falls under the latter.  I mean sometimes you have some things in your fridge you just need to use up.  Sometimes you don't feel like slaving away in kitchen after a long day at work.  But one thing is for certain, you always want a nice meal and this Vegan Ravioli with a Mushroom Pan Sauce Recipe gives you just that.

For this Vegan Ravioli with a Mushroom Pan Sauce Recipe you will need a few simple ingredients:

  • 1 9 oz package of Vegan Ravioli
  • 1 5 oz Shiitake Mushrooms, sliced
  • 1 Onion, Sliced
  • 4-6 Cloves of Garlic, sliced
  • 2 cups Vegetable Broth
  • 1/4 c Nutritional Yeast
  • Salt and Pepper, to taste
  • Parsley and Vegan parmesan cheese, to top
To begin you will cook the ravioli according the the instructions of the packaging.  

You can use any ravioli you like.  I am using the Kite Hill Mushroom Ravioli here, but any vegan ravioli will do.  And hey, if you are not vegan this would be great with a ricotta ravioli as well.

Next, you will want to prepare all of your vegetables. 

This is a quick cooking meal so having everything prepared in advance is key.  

The mushrooms, onions, and garlic sautéing in the pan.

Once all of your vegetables are ready you are going to add them into a hot pan.  

I will not be using oil here.  

If you choose this technique and notice the vegetables starting to stick to the pan, just add a little water or broth.  

However, if no oil is not important to you so ahead and add a little oil.

pepper and let the cook for 3-5 minutes until tender and brown.

Now you will add the broth to the pan. 
Bring to a simmer and let reduce by half.  
That simply means that half of the liquid in the pan will be absorbed by the mushrooms for flavor or evaporate.

Once the liquid has reduced by half, add the nutritional yeast.

Stir the nutritional yeast into the liquid in the pan and let simmer a couple minutes until it thickens.

Once your ravioli has finished cooking you can plate it and spoon this delicious sauce over it.  I like to top mine with some fresh chopped parsley and grated vegan parmesan, as well a serve it with a simple side salad and if I'm feeling really naughty...garlic bread.

Ingredients

  • 1 9 oz package of Vegan Ravioli

  • 6 Cloves of Garlic, sliced
  • 2 cups Vegetable Broth
  • 1/4 c Nutritional Yeast
  • Salt and Pepper, to taste
  • Parsley and Vegan parmesan cheese, to top

Instructions

  1. Prepare the ravioli according to the instructions in the package.  
  2. To a hot pan add the onions, mushrooms, and garlic.  Cook 3-5 minutes until tender and browned.  
  3. Add the vegetable broth to the pan, bring to a simmer, and reduce the liquid by half.  
  4. Stir the nutritional yeast into the broth and let simmer to thicken. 
  5. Add the cooked ravioli to a plate and spoon the mushroom pan sauce over.  
  6. Top with fresh chopped parsley and vegan parmesan.  
  7. Serve and Enjoy!
