Over the years you have seen a variety of recipes from me. Some more intricate, some incredibly simple. This recipe falls under the latter. I mean sometimes you have some things in your fridge you just need to use up. Sometimes you don't feel like slaving away in kitchen after a long day at work. But one thing is for certain, you always want a nice meal and this Vegan Ravioli with a Mushroom Pan Sauce Recipe gives you just that.
- 1 9 oz package of Vegan Ravioli
- 1 5 oz Shiitake Mushrooms, sliced
- 1 Onion, Sliced
- 4-6 Cloves of Garlic, sliced
- 2 cups Vegetable Broth
- 1/4 c Nutritional Yeast
- Salt and Pepper, to taste
- Parsley and Vegan parmesan cheese, to top
Next, you will want to prepare all of your vegetables.
This is a quick cooking meal so having everything prepared in advance is key.
Once all of your vegetables are ready you are going to add them into a hot pan.
I will not be using oil here.
If you choose this technique and notice the vegetables starting to stick to the pan, just add a little water or broth.
However, if no oil is not important to you so ahead and add a little oil.
Season the vegetables with a little salt and...
pepper and let the cook for 3-5 minutes until tender and brown.
Once the liquid has reduced by half, add the nutritional yeast.

Vegan Ravioli with a Mushroom Pan Sauce
Ingredients
- 1 9 oz package of Vegan Ravioli
- 1 5 oz Shiitake Mushrooms, sliced
- 1 Onion, Sliced
- 6 Cloves of Garlic, sliced
- 2 cups Vegetable Broth
- 1/4 c Nutritional Yeast
- Salt and Pepper, to taste
- Parsley and Vegan parmesan cheese, to top
Instructions
- Prepare the ravioli according to the instructions in the package.
- To a hot pan add the onions, mushrooms, and garlic. Cook 3-5 minutes until tender and browned.
- Add the vegetable broth to the pan, bring to a simmer, and reduce the liquid by half.
- Stir the nutritional yeast into the broth and let simmer to thicken.
- Add the cooked ravioli to a plate and spoon the mushroom pan sauce over.
- Top with fresh chopped parsley and vegan parmesan.
- Serve and Enjoy!
