Vegan Stuffing with a Walnut Sausage Recipe

We've almost come to an end to my first vegan Thanksgiving menu, and no holiday menu would be complete without stuffing, or dressing, or whatever you want to call it at your house because there are no rules here on the matter.  This is a safe space.   Of course it would have been easy to make my usual stuffing recipe vegan.  I can link that HERE if you are interested, but I wanted to challenge myself a little bit so I decided to get fancy and make a Vegan Stuffing with Walnut Sausage.  




I know you have to be thinking I'm crazy by now, but give me a chance.  After the success of the Walnut Taco Meat Recipe I posted on here, I thought to myself it has to be just as easy to make sausage so I played with the spices a little and Viola!  Greatness was born!  I know you are going to love this one so...

Let's Get started!  

For this Vegan Stuffing with Walnut Sausage you will need a few simple Ingredients:


  • 8 cups of Stale Bread, cubed
  • 1 cup of Walnuts, soaked overnight and finely chopped
  • 8 oz Mushrooms, sliced
  • 3 Carrots, diced
  • 3 Stalks of Celery, diced
  • 1 Onion, diced
  • 4-6 Cloves of Garlic, minced
  • 1/4 tsp Thyme
  • 1/4 tsp Fennel seed
  • 1/4 Red Chili Flake, optional
  • 1/2 tsp Parsley
  • 1/2 tsp Sage
  • 1/2 tsp Nutmeg
  • 2 Tbsp Maple Syrup
  • 2 Tbsp Low Sodium Soy Sauce
  • 1-2 c Vegetable Broth
  • Salt and Pepper, to taste
To begin you will need to preheat your oven to 325 degrees.  


Next, go ahead and prepare all of your vegetables and pre-measure your spices.


You should have soaked the walnuts, but if you forgot, don't worry.  You can boil some water and pour over them.  Let them soak for 30 minutes.  


Next you are going to drain your walnuts.  


Add the carrots, celery, garlic, and onion to a hot pan and cook for about 5 minutes until tender and translucent.  


Now add the mushrooms and cook for another 5 minutes.  


While the vegetables and mushrooms are cooking you can finely chop your walnuts. 
If you have a food processor I HIGHLY recommend using that, but you can also use a knife.  
I used the knife here to show you how easily it can be done.  


Add the minced walnuts to the pan.  


Add the spices, 


Maple syrup, and soy sauce. 

Cook for another 5-7 minutes until browned.  


If your walnut sausage starts to stick to the pan simple add a little water and scrape everything up from the bottom.


Your walnut sausage base is not complete. 


Now add the stale bread to a large mixing bowl.  


Add in the walnut sausage mixture.  


Stir everything together.


Pour in the vegetable broth until the bread is saturated and soft.  


Give everything another stir, season with salt and pepper to taste.  


Place in a greased 9x13 baking dish.  


Place in the oven for 30minutes.  



After 30 minutes your delicious Vegan Stuffing with Walnut Sausage is ready to eat!  Would you look at that bread!  Crispy and soft, and the flavor, OH MAN THE FLAVOR is out-of-this world.  You definitely get the warm earthy flavor of the herbs, and it totally tastes like sausage.  This Vegan Stuffing with Walnut Sausage is a new favorite on my Thanksgiving table!  I know you're gonna love it so get in the kitchen and give it a try tonight!

Vegan Stuffing with Walnut Sausage Recipe

Ingredients

  • 8 cups of Stale Bread, cubed
  • 1 cup of Walnuts, soaked overnight and finely chopped
  • 8 oz Mushrooms, sliced
  • 3 Carrots, diced
  • 3 Stalks of Celery, diced
  • 1 Onion, diced
  • 6 Cloves of Garlic, minced
  • 1/4 tsp Thyme
  • 1/4 tsp Fennel seed
  • 1/4 Red Chili Flake, optional
  • 1/2 tsp Parsley
  • 1/2 tsp Sage
  • 1/2 tsp Nutmeg
  • 2 Tbsp Maple Syrup
  • 2 Tbsp Low Sodium Soy Sauce
  • 2 c Vegetable Broth
  • Salt and Pepper, to taste

Instructions

  1. Preheat the oven to 325 degrees.  
  2. Drain the soaked walnuts and mince. *
  3. In a hot pan cook the carrots, celery, onion, and garlic for 5 minutes.
  4. Add the mushrooms and cook for another 5 minutes.
  5. Add the minced walnuts, spices, maple syrup, and soy sauce to the pan.  Cook for another 5 minutes. If you notice something sticking to the bottom of the pan add a little water and scrape up the bits. 
  6. Add the bread to a large mixing bowl.  
  7. Add the walnut sausage mixture to the bowl and stir everything together.  
  8. Pour in the vegetable broth until all the bread is soft and saturated with it.  Give everything another stir.  
  9. Add the stuffing mixture into a greased 9x13 baking dish. 
  10. Place in the oven for 30 minutes.
  11. Serve and Enjoy!

Notes:

  • If you forget to soak the walnuts just boil some water, pour over the nuts, and let them soak for 30 minutes.
  • I recommend using a food processor to mince the walnuts. Be careful not to over process because you will have walnut butter. If you don't have a food processor a knife will work just fine.
