Walnut Taco Meat Recipe Vegan

I think its easy for any home cook to fall into the food rut.  You get stuck making the same thing over and over again.  I am no different.  That's until we went plant-based, or vegan if you will, with our eating.  Now I find myself trying all sorts of new and exciting things that blow my mind.  This Vegan Walnut Taco Meat is one such recipe.

It has great texture, its meaty, and well, it makes some of the BEST tacos I have ever had!  I can't wait to share it with you so...

Let's Get Started!

For this Vegan Walnut Taco Meat Recipe you will need a few simple ingredients:

The ingredients needed for the walnut taco meat

  • 2 cups Walnuts, soaked, drained, and rinsed
  • 8 oz Mushrooms, finely chopped
  • 1 Tbsp Dried Minced Onion
  • 1 Tbsp Tomato Plaste
  • 1 packet of Taco Seasoning
  • 1/2 c Water
  • 1/4 c low Sodium Soy Sauce
  • Salt and Pepper, to taste 

The walnuts soaking overnight in a bowl of water.

Before you begin, you will need to soak your walnuts overnight.

The soaked walnuts drained and rinsed.

You will drain and rinse the walnuts.

The walnuts and mushrooms in a food processor.

Add the soaked walnuts into a food processor with the mushrooms.

The mushrooms and walnuts ground up in a food processor to resemble meat.

Pulse until everything is finely chopped and you have a "meaty" texture.

Add the walnut meat to a hot pan with a little extra virgin olive oil.

Add the dried minced onion.

You can 100% use fresh diced onion here, I just didn't have any at the time of this post.

Season the walnut meat with some salt,

And taco seasoning.

Stir everything together until the seasoning is fully coating the walnut meat.

Tomato paste being added to the walnut meat.

Add the tomato paste, 

Soy sauce being added to the walnut meat.

Soy sauce,

Water being added to the walnut meat.

And water.

Stir until the tomato paste has dissolved into the walnut meat.

Simmer for about 5 minutes.


And there you have it!  Delicious Walnut Taco Meat!


I like to add a little sliced green onion or cilantro for garnish and would you look at that texture.  This vegan Walnut Taco Meat Recipe is truly mind blowing and the best part is you can use it for SO MANY OTHER things!  Omit the taco seasoning and you can use it in spaghetti.  Add a little sage and you have sausage.  The sky is the limit.  We loved this recipe and I know you will too so get in the kitchen and give it a try tonight.

Vegan Walnut Taco Meat Recipe

With the perfect "meaty" texture this Walnut Taco meat is totally vegan and 100% delicious! Even the carnivores will be blown away!

  • 2 cups Walnuts, soaked, drained, and rinsed

How to cook Vegan Walnut Taco Meat Recipe

  1. To begin soak your walnuts overnight. 
  2. Drain and rinse the walnuts.
  3. Place the walnuts and mushrooms into a food processor and pulse until it forms a "meat-like" texture. 
  4. Place a pan over medium-high heat, add a little oil, and allow the pan to get HOT. 
  5. Add the walnut meat to the pan along with the dried minced onions, the salt, pepper, taco seasoning, tomato paste, soy sauce, and water.  
  6. Mix everything together and let simmer for 5-10 minutes until browned.  
  7. Serve up on your favorite tacos, nachos, burritos, etc and ENJOY!
