Easy Vegan Mac and Cheese Recipe

When going plant-based one of the things I thought I would never again get to enjoy was a good ol' bowl of mac & cheese.  But after perfecting my Easy Vegan Cheese Sauce Recipe, all I have to say is "Hello Lovah!" to this deliciously amazing Easy Vegan Mac & Cheese!

Creamy, dreamy, cheesy...Oh!  And did I mention its healthy!?!  That's right with this Easy Vegan Mac and cheese you can have your favorite pasta dish and your veggies too! I can't wait to share it with you so...

Let's get started!

For this Easy Vegan Mac & Cheese Recipe you are going to need a few simple ingredients:

The ingredients needed to make the easy vegan mac and cheese.

  • 1 lb of Elbow Macaroni
  • 1 cup Unsalted Cashews, soaked and drained
  • 2 cups of Reserved Cooking Water
  • 1/2 cup Nutritional Yeast
  • 2 Carrots
  • 2 Potatoes
  • 1 onion
  • 3 cloves of garlic
  • Salt and Pepper, to taste

the onion, carrots, potatoes, and garlic all boiling in a pan.

To begin place the roughly chopped carrots, potatoes, onion, and garlic in a pot of water.
Bring the water to a boil and cook for 15 minutes.

Two cups of the reserved cooking water.

After the 15 minutes have elapsed, reserve 2 cups of the cooking water.

The soaked nuts and cooked vegetables in a blender.

Drain the rest of the water from the vegetables and place them into a blender.

Nutritional yeast being added to the blender.

To the blender add the nutritional yeast,

Salt being added to the blender.

Salt,

Ground black pepper being added to the blender.

And pepper.

The reserved cooking water being added to the blender.

Pour in the reserved cooking water.

The cheese sauce blending in the blender.

Place the lid on your blender and blend for 1 minute or until everything is silky smooth.

Next bring a pot of salted water to a boil and add the pasta.
Cook according to the directions on the box.

The cooked and drained pasta in the pot.

Drain the fully cooked pasta and return to the pot.

Pour the desired amount of cheese sauce over the pasta.

Salt and pepper being added to the Easy Vegan Mac and Cheese.

Season with a little salt and pepper.

Stir everything together until all of the pasta is liberally coated in the cheese sauce.

Ingredients:

  • 1 lb Box of Elbow Macaroni
  • 1 c Unsalted Cashews, soaked overnight and drained 
  • 2 Potatoes, peeled and chopped.
  • 2 Carrots, peeled and chopped
  • 3 Cloves of Garlic
  • 2 c of Reserved Cooking Water
  • 1/2 c Nutritional Yeast
  • Salt and Pepper, to taste

Instructions:

How to cook Easy Vegan Mac and Cheese Recipe

  1. Place the cashews in a bowl and cover with water to soak overnight.
  2. Place the onion, carrots, potatoes, and garlic in a pot of water and bring to a boil.  Cook for 15 minutes. 
  3. Drain the nuts * 
  4. Reserve 2 cups of the cooking water from the vegetables and drain the water from the rest. 
  5. Add the soaked nuts and the cooked vegetables to a blender.
  6. Add the nutritional yeast, reserved cooking water, salt, and pepper to the blender.  
  7. Blend at least 1 minute or until smooth a creamy.  
  8. Cook pasta according to the box. 
  9. Pour Easy Vegan Cheese Sauce over the cooked pasta and stir.  
  10. Serve and Enjoy!

Notes:

* you do not have to use raw cashews for this. Just make sure they are unsalted.
