  • Family Friendly:  Kids and adults alike go crazy for these cheesy, saucy, taquitos.
  • Customizable:  Use chicken, beef, or cheese taquitos--whatever you have on hand!

INGREDEINTS:
  • 1 Box (about 20) Frozen Taquitos (beef, chicken, or cheese--your choice)
  • 1 (10 oz) can of Red Enchilada Sauce
  • 1 to 2 cups Shredded Cheese (Cheddar, Mexican Blend, or whatever you love)

HOW TO MAKE LAZY MAN'S ENCHILADAS:
  1. Preheat the Oven:  Set your oven to 375°F (190°C)
  2. Layer the Taquitos:  Arrange the frozen taquitos in a single layer in a greased 9x13 inch baking dish.  Pack them in snugly for maximum sauciness.
  3. Add the Sauce:  Pour the enchilada sauce evenly over the taquitos.  Make sure they're well coated for that authentic enchilada vibe.
  4. Top with Cheese:  Sprinkle a generous layer of shredded cheese all over the top.
  5. Bake:  Place the dish in the oven and bake for 25-30 minutes, or until the taquitos are hot and the cheese is melted and bubbly.
  6. Serve:  Garnish with chopped cilantro, sliced green onions, black olives, or a drizzle of sour cream if you're feeling fancy.  But honestly...they're perfect as is.

TIPS AND TRICKS FOR THE BEST LAZY MAN'S ENCHILADAS:
  • Taquito Variety:  Chicken, beef, or cheese, choose your favorite or mix and match!
