Easy Vegan Cheese Sauce Recipe

When I went plant-based a few months ago one thing that I knew I would miss most of all was cheese.  Even though I have been lactose intolerant most of my life it didn't matter.  I would endure anything for cheese.  I was a slave to it if you will.  However, I am a slave no more, nor do I have to miss out!  This Easy Vegan Cheese Sauce Recipe is why!

Let's Get Started!

For this Easy Vegan Cheese Sauce you will need a few simple ingredients:

The ingredients needed to make the Easy Vegan Cheese Sauce

  • 1 cup Unsalted Cashews, soaked overnight
  • 2 Potatoes
  • 2 Carrots
  • 1 Onion
  • 3 Cloves of Garlic
  • 1/2 cup of Nutritional Yeast
  • 2 cups of Reserved Cooking Water
  • Salt and Pepper, to taste
The first step in this glorious plant-based cheese making process is to soak your nuts overnight. 

Many people will tell you that your cashews have to be raw, etc.  I don't have the budget for that, and so I have found that as long as they are unsalted and you soak overnight you won't have an issue.  


A large pot on the stove, full of water, coming to a boil.

Next you will need to place a pot of water on the stove.

The onions, garlic, potatoes, and carrots coming to a boil in the pot.

To the pot of water add the roughly chopped potatoes, carrots, onion, and garlic.

Bring to a boil and cook for 15 minutes.

2 cups of the vegetable water from the pot.

After 15 minutes have elapsed, reserve 2 cups of the cooking water and drain the vegetables.

The soaked cashews and boiled vegetables in a blender.

After that, drain your soaked cashews and add nuts and cooked vegetables to a blender.

Add the nutritional yeast,

You can find that at just about any store these days.
It's what gives this Easy Vegan Cheese Sauce it's cheese flavor.

Place the cover on your blender and blend for at least 1 minute or until total smooth and creamy.

  • 1 cup Unsalted Cashews, soaked overnight
  • 2 Potatoes
  • 2 Carrots
  • 1 Onion
  • 3 Cloves of Garlic
  • 2 cups of Reserved Cooking Water
  • 1/2 Nutritional Yeast
  • Salt and Pepper, to taste

Instructions:

How to cook Easy Vegan Cheese Sauce Recipe

  1. Soak the cashews in water overnight.
  2. Roughly chop the potatoes, carrots, onions, and garlic.
  3. Place in a large pot of water and bring to a boil. 
  4. Cook for 15 minutes. 
  5. Reserve 2 cups of the cooking water.
  6. Drain the cashews and place in a blender. *
  7. Drain the vegetables and place in the blender as well.
  8. Add the reserved cooking water, nutritional yeast, salt, and pepper.  
  9. Blend for at least 1 minute until smooth and creamy.  
  10. Serve and Enjoy!

Notes:

*You must drain the water from the nuts. You cannot use it in the sauce.
