Let's get started!
For this Crockpot West Virginia Soup Bean Recipe you are going to need a few simple ingredients:
- 1 32 oz bag of Pinto Beans
- 1 Onion, quartered
- 1 Ham Bone or Ham Hock or Fat Back or Bacon etc.
- 1 tsp Cumin
- 1 tsp Onion Powder
- 1 tsp Garlic Powder
- 1 tsp Salt
- 1 tsp Pepper
- 4 cups Chicken Broth
- 4 cups Water
The night before you want to cook your beans place them in a large bowl, sift through them to see if there are any stones, and cover with water.
You will want to make sure there is an inch or two of water above the beans.
The next morning pour the beans into the slow cooker.
Season with the onion powder, garlic powder, and cumin.
You can also add the salt and pepper.
I will tell you that if you have not soaked your beans you can not season them with spiced until about 2 hours before you eat. It will affect the way they cook.
Place the quartered onion in the slow cooker.
Add the ham bone or any other meat protein you choose to use.
Combine the chicken broth and water.
Place the lid on the slow cooker and set to LOW for 8 hours.
After 8 hours remove the ham bone from crockpot and remove any meaty bits to place back in the beans.
Give everything a stir and you are ready to eat!
Now I know people eat their beans differently depending on where they are from, but here in West Virginia this is how you will find it served. For these Crockpot Soup Beans you're gonna to want to serve it over some cornbread with a little diced onion on top and a side of fried potatoes.
