Sweet Potato Hash with Egg Recipe

Recently I visited my sister and her family in Columbus, Ohio and whilst I made dinner for everyone in the evening, she made breakfast every morning.  One thing she made that I was WILD for was this Sweet Potato Hash with Egg Recipe.

For this Sweet Potato Hash Recipe with Egg you will need a few simple ingredients:

The ingredients needed to make the sweet potato hash with egg recipe.

  • 4 Sweet Potatoes, diced
  • 1 Green Bell Pepper, diced
  • 1 Onion, Diced
  • 1 lb of Breakfast Sausage
  • 1 Tbsp Garlic, minced
  • 4 Eggs, fried
  • 2 Tbsp Oil
  • 2 Tbsp Butter
  • Salt and Pepper, to taste

Butter and oil in a cast Iron skillet.

To begin you will need to place a deep skillet over HIGH heat and add the oil and butter.

Once the pan is hot add the sausage and cook until brown and no longer pink.

While the sausage is browning you can prep your veggies.

You'll notice that I didn't bother with peeling my potatoes.  Mainly because I can't be bothered with it, but also there's lots of great nutrients in that peel!

When the sausage is fully cooked remove it from the pan and place on a paper towel.

To the hot pan add the potatoes and cook for 10 minutes.

The onion, green pepper, and garlic being added to the pan with the sweet potatoes.

After 10 minutes add the pepper, onion, and garlic and cook for 10 more minutes.

The cooked sausage added to the pan with the sweet potatoes.

After 20 minutes you can return the sausage to the pan and taste for seasoning.  Add any salt and pepper you think it needs.

Before you serve fry your eggs and serve over the top of the skillet of hash.

I served mine up in a bowl with the yolk of the egg oozing down throughout the hash.  It.Is.Delicious!  I know it seems so basic, but this Sweet Potato Hash Recipe with Egg is unbelievably good and I know you're entire family is going to love it so get in the kitchen and give it a try tonight!
