I can't believe I'm saying this, but it's Back To School season once again and I know all you mammas and daddies out there are trying to adjust back to the busy routines while getting dinner on the table. That's why this month I am focusing on easy inexpensive meals that the whole family will love. I can't think of a better way to kick off this series than with this DELICIOUS Ritz Cracker Chicken Bake Recipe.
This all-in-one meal only requires a few simple ingredients and while it bakes you have time to get some other things done. I know you're gonna love it so...
Let's Get Started!
For this Ritz Cracker Chicken Bake Recipe you will need a few simple ingredients:
- 4-6 Thinly Sliced Boneless, Skinless Chicken Breasts
- 1 cup of Sour Cream
- 1 10 oz can of Cream of Chicken Soup
- 1 15 oz can of Mixed Vegetables, drained
- 2 cups Shredded Cheese
- 1 sleeve of Ritz Crackers, crumbled
- 1 Stick of Butter, Melted
- Salt and pepper, to taste
To begin you will need to preheat your oven to 350 degrees.
I HIGHLY recommend thinly sliced chicken for this recipe, but if you don't have that on hand no worries. Just simply slice your chicken in half as I did here.
Place the chicken into a greased baking dish and season with salt and ...

In a mixing bowl combine the cream of chicken soup, sour cream, and can of mixed vegetables.
Again, I recommend frozen mixed vegetables, but I didn't have that on hand and the canned worked great!
Spread the mixture over the chicken in the casserole dish.
Next, top the casserole with the shredded cheese.
I know what you're thinking. "Mandee, why wouldn't you put the cheese on top!?!" Well, the answer is easy. This layer of cheese creates a barrier between the sauce and cracker topping. This way the crackers do not get soggy during the cooking process.
Now it's time for the fun part, crushing the crackers.
I recommend doing this OVER the casserole dish and invite the kiddos to join in!
Sprinkle the cracker topping over the casserole.
Drizzle the melted butter over the cracker topping.
Now place the Ritz Cracker Chicken Bake in the oven.
Bake for 45 minutes to 1 hour.
I ended up baking mine for an hour.
And there you have it, a gorgeous Ritz Cracker Chicken Bake!
Look at that beautiful golden topping! Even though there are vegetables in this dish I like to serve mine with a crisp salad or fresh veggies such as cucumber and tomatoes. This help break up the richness of the casserole.
And just so you know...this chicken is tender, juicy, full of flavor, everything you want your chicken to be!

- Place the chicken in a greased baking dish and season with salt and pepper.

- Top with shredded cheese.
- Sprinkle the crushed Ritz crackers over the top of the casserole.
- Drizzled the melted butter over the cracker topping.
