I wish I could tell you that I'm not enjoying the chilly temps September has brought to northern West Virginia, but I would be lying. I've been loving every minute of it! It's because of this that I've been craving all things comfort food. You know, those warm and hearty meals that stick to your ribs. Well, this Cheesy Cajun Chicken and Sausage Skillet ticks off ALL of those boxes and more!
Warm, spicy, and best of all everything is done in ONE PAN! I know you're gonna love this one so...
Let's Get Started!
For this Cheesy Cajun Chicken and Sausage Skillet recipe you are going to need a few simple ingredients:
- 2 Boneless Skinless Chicken Breasts, diced
- 1 lb. Andouille Sausage, sliced
- 1 Green Pepper, large dice
- 5-6 Green Onions, sliced
- 1 c Uncooked Rice
- 4 c Chicken Broth
- 1 Tbsp Garlic, minced
- 1 Tbsp Cajun Seasoning
- 2 tsp Kosher Salt
- Shredded Monterey Jack Cheese
This is a BIG dish, so you will need a deep skillet.
Place over HIGH heat and add a little oil to the pan.
Once the pan is hot, add the chicken.
To the chicken add the cajun seasoning and salt.
Cook until no longer pink and browned on the outside.
**If you are not someone who loves spice you can start with a teaspoon cajun seasoning and go from there**
Once the chicken has started to brown on the outside, add the sliced sausage to the pan and let it brown as well.
**Again, if you are not into spicy you can totally replace the andouille sausage with regular smoked sausage**
Once the chicken and sausage have fully cooked, add the green peppers and the WHITE PART of the green onions to the pan. You will add the garlic as well. Stir everything together and sauté for a couple minutes.
Now you will add the rice to the pan and stir everything together.
The chicken broth, stir everything together, lower the seat to MEDIUM/HIGH, cover, and cook for 20 minutes stirring occasionally.
This is what the dish will look like after 20 minutes.
Now top with the desired amount of shredded cheese.
Place under the broiler to let that cheese melt and brown.
Once the cheese is melted and brown you can remove from the broiler and top with the GREEN part of the green onions!
