Can you believe we are half way through Crocktober?  I can't believe how quickly it is going by.  I don't know about you, but I have had some pretty amazing food, and my opinion about crockpot cooking has drastically changed!  With that being said, I can't wait to share today's recipe with you.  A few weeks ago I shared a recipe for Mississippi Pot Roast.  You guys loved it, and so I thought to myself "Why not do a chicken version?"  That is how this Crockpot Mississippi Chicken was born.

You are not going to believe how much flavor you are going to get out of this simple recipe!  I can't wait to share it with you so...

Let's Get Started!

Crockpot Mississippi Chicken Recipe:
*Prep Time: 5 min *Cook Time: 5 hours *Difficulty:  Easy  *Servings: 4-6

Ingredients:

  • 3 Boneless Skinless Chicken Breasts
  • 1 Packet of Ranch Mix
  • 1 Packet of Brown Gravy Mix
  • 1 Stick of Butter
  • 8 Whole Pepperoncini

I know I have to be sounding like a broken record by now, but these Reynolds Kitchens Slow Cooker Liners have been such a game changer for my during all this.  I have also purchased some at Aldi as well recently.

Okay, so once you line your crockpot, place the chicken across the bottom.

Next I like to combine the ranch and gravy mixes in a small bowl.
I just feel like it helps distribute the flavor better.

Now I sprinkle the seasonings all over the chicken.

Place the pepperoncini across the top of chicken.

A question I know I am going to get is "Do the peppers make this dish spicy?"  The answer is no.  The pepper gives the chicken nice tang that helps to balance the richness of everything else.

Cut the butter into 8 equal sized pats and place across the top of the chicken as well.

Cover the crockpot with the lid.

Turn the temperature setting to LOW and cook for 4-5 hours.

In case you are wondering, the crockpot I am using here is the Crock-Pot 6.5 qt Programmable Touchscreen Slow Cooker.  I am absolutely obsessed with this crockpot.  It cooks so great, and I love the programmable touchscreen.

After 5 hours the chicken with look like this.

Simply shred the chicken and you are ready to serve!

This Crockpot Mississippi Chicken Recipe is rich and robust in flavor!  I'm literally drooling just thinking about it.  So versatile, you can serve it with anything, but my favorite way is over farro ( a whole grain that I like to use in place of rice) and steamed mix vegetables.  SO GOOD!  No matter how you serve it, this Crockpot Mississippi Chicken is guaranteed to be a family favorite in no time, so get in the kitchen and make it TONIGHT!

And as always...

Happy Reading, Happy Eating, and Happy Crocktober,
~The Kitchen Wife~
