Recently I was FaceTiming with my sister and she was talking about her anxiety over her oldest going into Kindergarten this year and her middle going into pre-k. "It's going to be a lot to balance with three boys in the morning." I was trying to think of ways to help her but let's be real, I'm not a momma. HOWEVER, I am a cook, and I wanted to give her some one-pot meals that she can throw together at dinner and have on the table in no time! That is where this Creamy Garlic Chicken and Green Bean Skillet came into play.

Creamy Garlic Chicken and Green Bean Skillet:
*Prep Time: -- *Cook Time: 40 min *Difficulty: Easy *Servings: 4-6
Ingredients:
- 1 lb of Boneless, Skinless Chicken Breasts, cubed
- 1 lb bag of Frozen Green Beans
- 3 c Chicken Broth
- 1 c Uncooked Rice
- 1/2 c Heavy Cream
- 4 Cloves of Garlic, minced
- 1 tsp Salt
- 1/2 tsp Ground Black Pepper
- 2/3 Tbsp Extra Virgin Olive Oil
To begin you will need a deep skillet. This entire recipe is made in one pot so it's gotta hold a lot.
Next turn the heat to medium/high and allow the pan to get hot!
Add the oil to the pan.
After that add the chicken to the pan and season it with the salt and pepper.
Cook the chicken until no longer pink. This should take about 5-10 minutes.
Once the chicken is fully cooked, add the garlic to the pan.
Allow the garlic to cook just long enough so that you can smell it coming from the pan, 1-2 minutes.
Now it's time to add the rice.
I used brown rice, but you can use any kind you like. Just know that the cooking times may vary.
Toast the rice for 1-2 minutes. This will give it a nice nutty flavor.
After you toasted your rice you can add the chicken broth.
Bring the broth to a boil, then lower to a simmer.
Cover the pan and cook for 15-30 minutes, depending on the cooking time of the rice.

Stir everything together, cover, and cook for another 5 minutes.
