I can't believe that Meatless March is soon coming to a close. Even though I am sad to see it go, I have managed to save some of the best recipes for last. This Vegan Sushi Bowl Recipe is the perfect example of that.
Yes, even when you are cutting meat out of your diet you can enjoy the yummy goodness that is sushi in the comfort of your own home! I can't wait to share this recipe with you so...

Vegan Sushi Bowl Recipe:
Prep Time: 3-30 min *Cook Time: -- *Difficulty: Easy *Servings: 1 Bowl
Ingredients:
- Rice of your Choice
- Edamame, shelled
- Cucumber, sliced
- Carrots, julienned
- Seaweed Paper, snipped into fine pieces
- 1 Scallion, sliced
- Coconut Aminos (or Soy Sauce), to taste
- Sesame Seeds
The base of any good sushi dish is the rice. For convienece sake, I used a microwavable brown rice.
Of course any rice that you like using is fine, but when you tell me I can have perfectly cooked rice in 3 minutes I am there!
Next I spoon in a little edamame for protein and some cucumber slices for crunchy freshness.
After that I add the carrots for color and vitamins.
To give it that "sushi" flavor I like to add a little chopped seaweed. I found this at my local Walmart, but I will leave a link (HERE) in case you aren't able.
I realize this is not authentic to sushi, but I like to add a little chopped green onion for some spice.
Then, I sprinkle some sesame seeds on top as well.
To top it all off with, I have been using these Coconut Aminos instead of soy sauce.
Of course you can use soy sauce, but I have been trying to limit my soy intake and these aminos packed full of vitamins and minerals. They were a little harder to find so again, I will link them (HERE).
**Another thing you can top this with is sriracha*

- Rice of your Choice, prepared
- Edamame, shelled
- Cucumber, sliced
- Carrots, julienned

- Coconut Aminos (or Soy Sauce), to taste
- Sesame Seeds
Directions:
- In your bowl add the rice, and top with the cucumber, edamame, carrots, green onions, chopped seaweed and sesame seeds.
- Drizzle a little coconut aminos, soy sauce, and or sriracha.
- Serve and Enjoy!
