Sausage and Herbed Quinoa Stuffed Acorn Squash Recipe

It seems like everyone I know is jumping on the clean eating band wagon.  The one thing that keeps coming up in our conversations is how expensive it is.  You can walk into the supermarket and fill a cart full of crap for $50, but that same amount will barely cover the bottom with fresh fruits and vegetables.  It's totally not right, but one of the tricks I've learned to help combat the cost of healthy eating is to buy items that are in season.  No matter if you are in the height of summer or the depths of winter, something will be growing.  This means that those items are abundant, which in turn means they are less expensive.  Take my Sausage and Herbed Quinoa Stuffed Acorn Squash for example.  

I literally paid .69 for a single squash at my local Aldi.  SIXTY-NINE CENTS! That will feed two people! And when you see this recipe you will see that though it is inexpensive, it tastes like a million bucks!  I can't wait to share it with you so....

Thai Sesame Zoodle Bowl with Steak Recipe

I LOVE PASTA.  I do.  I'm not ashamed. If food could be a spirit animal, pasta would be mine.  I love it with sauce, I love it with cheese, I love it with nothing but garlic and oil.  I...LOVE...PASTA.   But let's be real, pasta is not my friend.  In fact, pasta hates me.  Don't get me wrong, it's fine when it's whole wheat and in small portions.  However, in this new season of life, I try and stay away from it.  I used to be pretty bummed about that until a friend told me about something magical.  ZOODLES!  

I know what you may be thinking.  "Mandee, are you turning into one of those freakish people who are trying to convince me that spaghetti squash is just like pasta?"  No, not at all.  Zoodles are not pasta.  BUT, if you're jonesing for pasta with meat sauce or your favorite Asian noodle dish, zoodles are a WONDERFUL alternative and my Thai Sesame Zoodles with Steak are the perfect example of that!

Healthy White Chicken Chili Recipe

So a couple of weeks ago, when I reposted my Perfect Chili Recipe,  so many of you asked me if I had a recipe for White Chicken Chili.  I hadn't posted one, and since it was so highly requested, I thought I would put one together for you over the weekend.  However, the white chicken chili I grew up on was always creamy and full of, well, fatty goodness.  Since I'm not about that life these days (well, I am, but I'm trying not to be.  lol ) I set out to create the perfect Healthy White Chicken Chili Recipe.

The Saturday Sip: Fall Covered Bridge Tour 2016

For those of you who may not know this, I'm a bit of a seasonal living junkie.  As I've gotten older, I'm realizing more and more that life goes by way to quickly and we need to be sure and savor every moment of it.  That's why I look for little ways to celebrate every season.  I love the Paper & Glam seasonal Living lists, and there are countless others such as the Fall Bucket List on The House of Plaidfuzz's blog.  Each of these give you simple ways to enjoy one of my favorite times of year, FALL!



Anytime you change your eating habits, your lifestyle really, you are going to be forced to get creative, think outside of the box, and try new things.  This has been my favorite part of this journey, and my Thai Cashew Chicken and Zucchini Stir Fry over cauliflower rice is the perfect example of that.

I used vegetables and herbs I wouldn't normally put together, I have NEVER used cashews in cooking (nuts have never really been my thing), and let's talk about using cauliflower for rice!?!  OH!  Did I mention that this Thai Cashew Chicken and Zucchini Stir Fry was ready was ready to eat in 16 MINUTES!?! I have always been a long time lover of soup.  There's just something about holding a warm bowl of goodness in your hand during these chilly autumn evenings that soothes the soul.  Another thing I'm starting to realize about soup is that, when you are trying to eat healthy, soup is ALWAYS a great option.  With all the countless combinations, the possibilities are endless.  Today, however, I'm keeping it simple with my Easy Chicken and Rice Soup Recipe.

You guys, I am in HEAVEN!  The temperature is really dropping and that can only mean one thing...IT'S CHILI SEASON!!!  I actually shared this recipe almost three years ago, in fact, it was the first recipe I every shared with y'all. Chicken Sausage and Kale over Rice Recipe

When I began to change my eating habits, one of the biggest hurdles I faced was those nights when I didn't feel like cooking a big meal.  Usually I would throw in a frozen pizza or order out, but it's not that simple when you're eating healthy.  So one night I LITERALLY tossed together some stuff in a pan, and my Chicken Sausage and Kale over Rice was born!
