I LOVE PASTA. I do. I'm not ashamed. If food could be a spirit animal, pasta would be mine. I love it with sauce, I love it with cheese, I love it with nothing but garlic and oil. I...LOVE...PASTA. But let's be real, pasta is not my friend. In fact, pasta hates me. Don't get me wrong, it's fine when it's whole wheat and in small portions. However, in this new season of life, I try and stay away from it. I used to be pretty bummed about that until a friend told me about something magical. ZOODLES!
I know what you may be thinking. "Mandee, are you turning into one of those freakish people who are trying to convince me that spaghetti squash is just like pasta?" No, not at all. Zoodles are not pasta. BUT, if you're jonesing for pasta with meat sauce or your favorite Asian noodle dish, zoodles are a WONDERFUL alternative and my Thai Sesame Zoodles with Steak are the perfect example of that!

Let's Get Started!
*Prep Time: 10 min *Cook Time: 8 min *Difficulty: Easy *Servings: 4 Servings
Ingredients:
- 2-3 Tbsp Extra Virgin Olive Oil
- 1 lb Top Round Steak, cubed
- 2 Medium Zucchini, spiraled
- 2 Carrots, Spiralized
- 4-5 Radishes, thinly sliced
- 3 Tbsp Toasted Sesame Oil
- 3 Tbsp Low Sodium Soy Sauce
- 1 Lime, juiced
- 1 Tbsp Maple Syrup
- 2 Scallions, chopped
- 1 tsp Fresh Ginger, minced
- 4-6 cloves of Garlic, minced
- 3 Tbsp Fresh Basil, chopped
I know I say this all the time, but any time you are going to make an Asian dish it is PIVOTAL that you prep everything ahead of time!
Once you have ever thing chopped, you can make your zoodles.
For this you will need some sort of spiralizer. I use the Paderno World Cuisine Tri-Blade Vegetable Spiral Slicer which I will link -->HERE<-- for you, but if that is a little out of your price range, I have used the Veggietti for this which I will link -->HERE<--.
Once you have run your zucchini and carrots through the spiralizer, you will place it into a bowl.
Now that everything is prepped, you will need to place a deep skillet over high heat and add your oil.
Once the pan is SMOKING hot add the steak.
Season the steak with a little salt and pepper and let it cook 2-3 minutes until brown.
Now add the radishes, scallions, and garlic to the pan.
Let cook for 2-3 minutes until the radishes begin to get tender.
In a measuring cup combine the sesame oil, soy sauce, maple syrup, lime juice, and ginger.
Whisk together.
When the radishes are tender, add the zoodles to the pan and
Add the sauce.
Add the basil to the pan and toss everything together.
And there you have it! A gorgeous, colorful, better-than-take-out, meal of Thai Sesame Zoodle Bowls with Steak. Even though there's not actual pasta in this dish, I promise you that these zoodles are equally as filling. Not to mention they're packed full of flavor and nutrients, something you aren't going to get with pasta. And can we just talk about the delicious sauce? YUM! Another thing about this recipe I would like to share is this; if you want to get your kids to eat more vegetables, ZOODLE THEM! When you make it fun they will eat it! Thai Sesame Zoodle Bowls with Steak:

Directions:
- Prep all of your vegetables.
- Place a deep skillet over high heat and add the oil.
- Once the pan is hot add the steak and season with salt and pepper.
- Cook the steak for 2-3 minutes.
- Combine the sesame oil, soy sauce, lime juice, maple syrup, and ginger in a mixing cup for the sauce.
- Next add the radishes, scallions, and garlic.
- Cook for 2-3 minutes until tender.
- Add the zoodles to the pan.
- Pour the sauce over everything.
- Add the basil to the pan.
- Toss everything together.
- Serve and Enjoy!
