Fiesta Ranch Chicken Tatchos

Football season is FINALLY here!  It just figures that opening day fell on the same day that we were traveling home from Myrtle Beach.  I knew we could possibly miss the first half so I logged into my provider, on my phone, and set our favorite team's game to record. If we fast forwarded through commercials we could catch up with the live stream in no time.   Since that was taken care of, I had to think of some great foodball food that wouldn't take a lot of time to prepare.  That's where the inspiration for Totcho Sunday came from!  And I can't think of a faster or tastier way to eat totchos than with my Fiesta Ranch Chicken Totchos!  What are totchos you ask?  Well, instead of using a tortilla chip for the base of your nachos, you use some delicious Ore Ida tater tots!  Oh believe me it's a GAME CHANGER and I can't wait to share with you how I whipped up this football delicacy in just minutes!  The first thing I had to do was run into Walmart to pick up the items that I needed.  I grabbed  bag of Kraft Mexican Four Cheese Blend Shredded Cheese, a bag of Ore Ida Tater Tots, a bottle of Kraft Ranch Dressing, some taco seasoning, and a rotisserie chicken from the deli.

  Now it's time to head home and get this party started!

Fiesta Ranch Chicken Totchos:
*Prep Time: 24 min.  *Cook Time: 2-3 min.  *Difficulty:  Easy *Servings:  8-10

Ingredients:

The ingredients needed for the tatchos.


  • 1 1 lb. Bag of Ore Ida Tater Tots
  • 1 24 oz. Bag of Kraft Mexican Four Cheese Blend, Shredded
  • 1 8 oz. Bottle of Kraft Classic Ranch Dressing
  • 1 1 oz. Package of Taco Seasoning
  • 1 Rotisserie Chicken from the Deli
  • Real Bacon Bits
  • Kraft Sour Cream
  • Chopped Scallions
To begin you will need to preheat the oven to 425 degrees.

Next I like to line a baking sheet with foil or parchment paper.  It makes for a quick clean up.
Now pour the Ore Ida tater tots onto the lined baking sheet, in a single layer and place into the preheated oven for 24 minutes.

While the tater tots are cooking, you will need to pick the chicken from the rotisserie chicken you purchased from the deli and place it into a mixing bowl.

I love the convenience of the rotisserie chicken for things like this because it's already cooked and hot, so it cuts prep time way down.

But don't throw away those bones!  NO WAY!  Place them into a resealable bag and put them in the freezer.  You can use it to make some DELICIOUS stock later!

Now, back to the chicken we picked.
Add the entire 8 oz. bottle of Kraft ranch dressing to it.

Now add a palm full of REAL bacon bits to the bowl as well.
Yes, I could have made my own bacon bits in the oven, BUT this is all about a quick dish, so cut those corners where you can.  Trust me, it's going to taste great!

Now add the taco seasoning to the bowl.

I like to get the low sodium variety.  You will notice that I am not adding any salt or pepper to this dish.  That is because it has all the seasoning it needs with the taco seasoning.

Now mix everything together.

To make this chicken mixture even better you will add about a cup of the Kraft shredded cheese and stir that into the chicken mixture as well.

I found these adorable and LARGE football shaped paper plates at Walmart for $1.97, so I picked them up as well. 

I placed two of the plates onto a baking sheet and I'll tell you why.  I can finish one off in the oven (as you will see in a minute) and have one on stand by for when I run out!  Genius, I know!!  *lol* 

However, you don't HAVE to get these plates.  You can simply assemble the totchos on the baking dish you cooked the tater tots on.  I am just all about the cute.

by now it will be time to take the cooked tater tots out of the oven.
I just love crispy potatoes, don't you?

Go ahead and turn the oven off at this point.

Now you can assemble your totchos!

Place a single layer of tater tots on the bottom of the plate.

Next spread a layer of the chicken and ranch mixture over the tater tots.

Now top with cheese and ...

These are going to get nice and crispy in the oven just you wait!

Now place the baking sheet with the plates into the oven just long enough for the cheese to melt all the way.

The oven will still be hot from cooking the tater tots, but not hot enough to burn the paper plates.

Once you take the totchos out of the oven you can top them with some creamy Kraft sour cream and chopped scallions.  Now who wouldn't want to devour that during a football game?

I'll tell you this much, I had to nearly check my husband a time or two as I was bringing this to the living room!

I can't even being to tell you how delicious these little morsels are, but hang on and I'll do my best.  *lol*

Oh my word!  The zestiness of the chicken and ranch mixture balances perfectly with the bacon and cheese! The Kraft sour cream cools down the spice from the taco seasoning.  And the tater tots...OH THE TOTS...they are the PERFECT base for this mouthwatering football treat!
