However, what if you could give them their favorite tuna treat, but with the flavors and the nutrition amped up? My Avocado Tuna Salad is the PERFECT lunch time treat! I will say that when shopping for tuna, I love Bumble Bee Albacore products because it's an easy and delicious way to add a variety of nutrients to your child's diet including lean protein, healthy fat, and important vitamins and minerals. Avocado Tuna Salad:
*Prep Time: 5 min. *Cook Time: -- *Difficulty: Easy *Servings: 2 c.
Ingredients:
- 1 Avocado
- 1 Pouch of Bumble Bee® Premium Albacore
- 2-3 tbsp. Sour Cream or Greek Yogurt
- 1 Lemon, juiced
- 1/2 Red Bell Pepper, finely diced
- 1/2 tsp. Onion Powder
- 1/2 tsp. Salt
- 1/4 tsp. Chili Powder
- 1/4 tsp. Cumin
- 1/4 tsp. Ground Black Pepper
To begin remove the avocado from the skin and place into a mixing bowl.
Immediately squeeze the juice of 1 lemon over the avocado.
Next add the sour cream.
You can also use Greek yogurt here, but it will not hold up over night if you do.
Now it is time for the seasoning.
Most children are not fans of onion so I like to use and onion powder here.
It adds great flavor and they will never know it's in there.
Next add a little cumin.
Cumin gives it a nice smokey flavor.
And now the Chili powder.
The black pepper.
And finally the salt.
Now, with a potato masher, mix the "dressing" together.
Taste for seasoning and make any adjustments.
To add some vibrant color and texture I added a little red bell pepper.
The red pepper also adds a little sweetness to the tuna salad.
And now it is time for the tuna!
Mix everything together and you are ready to go.
I like to assemble this with some crackers, carrots and sweet pepper sticks, some organic apple sauce, and a small sweet treat. I know, I know, but come on! Every child deserves a little mid day pick-me-up! *lol*
